its a figure of speech, obviously. what does it mean?

1. I'll love him until the day I die?
2. I'll love him until the day he dies?
3. I love him so much that I'll die for him?
4. My love is so overwhelming that it will kill him?
5. My love is so overwhelming for him that it will kill me?

sometimes "I LOVE YOU" just isn't enough... you need to one up it just to emphasize the feeling thus there is "LOVE YOU TO DEATH"

almost like "I HATE YOU" - one up that "I HATE YOUR GUTS" (you're not just hating the person but specifically their guts!)

"I'M TIRE" - "I'M FUCKIN TIRE" - (not only are you tire, you're tire and fucking a tire)

I think you were getting to something but then you went waaaay left field on us.

when you say "I'm fucking tired" means that you are very tired. The "fucking" part especially in that context is for added emphasis.

"I'm bored out of my mind" means that the boredom is driving you crazy. idle time is the devil's workshop they say

"I'm bored to death" is a figure of speech meaning that you're so bored that you could die.

Anywho.....I think its #5. "I love him to death" means that her love is so overwhelming for her that its killing her. I'm sticking to my guns on that.
