This isnt for the faint of heart... http://photos-g.ak.fbcdn.net/hphotos..._8341016_n.jpg Procedure as follows, cut off the spikes, cut out the bottom mouth piece, and then crack the shell around to open her up. then spoon out the roe. i found the easiest way was no different than seperate egg yolk from egg white, while running under fresh water. My bro works at a sushi restaurant, and when he started he was tasked with cleaning sea urchins. He now refuses to ever eat uni :lol By the way, the cholesterol in uni is really good for you. You should eat as much as you can! |

3 red ones for $10 bucks 2 green ones for $5 bucks considering fresh uni opened like this at a japanese restaurant is around $15 bucks, this was a steal! |

red is traditional one you get at japanese restaurants. its creamy and sweet. the green flavor is more delicate, not as sweet and creamy but its roe holds its shape better. i had some this morning on a slice of toasted french bread, w/ olive oil, s&p, and some balsamic. good stuff! |

as i said, what you pay for is the prep. the prep is pretty messy. each sea urchin has 5 pieces of roe. the prep is where ur money goes to when u order at a restaurant, and honestly, i understand why they would charge that price. not only do u need to get the roe out, but u also need to clean it, that is seperate the roe from the shell then the roe from the innerds, then gentle rinse under water to have it fully clean. now if they plan on reusing the shell as a serving dish, then u gotta make sure the shell is intact. Whatever you wish to believe is up to you, but go out there and tell a doctor straight up. "I'm on a high cholesterol diet full of saturated fat," and see what he says, probably not "good going chap!" As a side note, Transfats are avoided due to the fact that they were originally non-hydrogenated fats (good) that have been converted into a version similar to saturated fats in form and function. So a high intake of saturated fats is just as bad as transfat. I won't waste my time explaining the organic structures of them. Rock on with your amazing health philosophy, it sure sounds tasty ;) |

My mom took my car to get these sea urchins at steveston too... now my car stinks like sea water :( The yucky looking stuff is just seaweed and is actually really easy to rinse out. |
