I don't know about you, but you're supposed to pronounce Sue the same as Su or Soo anyways.
She moved to the UK, so she probably used Sue since it's more "English" appropriate.
There isn't really a "Correct" romanization for Korean words, and they use whatever they want to use.
This leads to a lot of confusion.
The pronunciation "Soo (수)" is never written Sue...it's almost always Su or Soo. Following general Korean "rules" for romanization, Sue would be read Sooeh (쇠)

It would probably be romanized Soi and Soe if it was following following the "rules" for that character.
And 쇠 is almost unheard of nowadays when used in a Korean name. It was a commonly used title when referring to slaves.
