Summer Food My all time favourite on hot days is ice cold Somen (thin Japanese noodles). Sauce for somen prepared a day or two before and sitting in fridge. Noodles sitting in ice water, then strained before eating. When I have the time, I make my own mentsuyu - chicken broth with swirled eggs, sliced shiitake mushrooms, onions, sugar, soy sauce and mirin. served with a bit of thinly sliced green onions on top. You can buy Mentsuyu (noodle sauce) at Fujiya. It's concentrated, so mix 4-1 with water. The secret is to have everything ice cold. Any other summer favourites? |
