Berkshire Hogs? Anyone know which butchers have them in vancouver? |
Nikuya in Richmond has them (sorry, I know you said Vancouver but wanted to throw one option out there incase no one else replies). |
For the non-gastronomically nerdy, Berkshire pork is highly valued because it is super marbled (think Wagyu beef). http://en.wikipedia.org/wiki/Berkshire_%28pig%29 Went to Pied-a-terre and they did a phenomenal job. Never even considered getting my hands on it, just assumed it'd be too pricey. So if anybody's got a good source, share the wealth! |

Copa Cafe @ Cambie and 23rd supposedly has kurobuta pork chops. Where's that tonkatsu from? I try my best to get chicken-katsu instead cause I find most places tend to overcook the pork. But kurobuta would be moist enough to get :drool |
