if at work, i would let it rest ontop of the convection oven

Green thai coconut curry. Has roasted chicken, celery, broccoli, onion, almonds, and cilantro sitting on rice

couple things....
appy
spicy tuna poke, w/ a spicy chilli sauce and gyoza chips
main
rare grilled blade steak (marinated in adobe chipotle puree, ground espresso, pineapple and brown sugar) .
Smoked ham hock and pea barley risotto (cooking liquid was a miso mushroom stock).
Underneath is a celeriac puree, and around it are honey roasted beets and pea shoots.
dessert
*haha don't mind the mess*
blood orange pastry cream, with a supreme of blood orange.
plated with crushed Ameretti cookie , and a blood orange sugared puff pastry stick. |

lamb chop
searing and torching the beef short ribs.
62 degree onsen egg
he also taught me how to make chinese milk tea.
a good way to finish a meal
