No worries . Just keep in mind, the higher the cook temp, the more carryover you will get.

i usually try to leave it on the element on the stove, while the oven is off (the heat kinda escapes through there and kinda keeps it warm)

if at work, i would let it rest ontop of the convection oven

few things to warm the soul from the cold weather.

Green thai coconut curry. Has roasted chicken, celery, broccoli, onion, almonds, and cilantro sitting on rice


Congee , made with a garlic ginger chicken stock. Plated with Chinese doughnuts, hard boiled egg, and cilantro

couple things....

appy

spicy tuna poke, w/ a spicy chilli sauce and gyoza chips



main

rare grilled blade steak (marinated in adobe chipotle puree, ground espresso, pineapple and brown sugar) .
Smoked ham hock and pea barley risotto (cooking liquid was a miso mushroom stock).
Underneath is a celeriac puree, and around it are honey roasted beets and pea shoots.


dessert
*haha don't mind the mess*

blood orange pastry cream, with a supreme of blood orange.
plated with crushed Ameretti cookie , and a blood orange sugared puff pastry stick.

Homemade Momofuku Bo Ssam. 18 lbs of meat (2 butts) served with deep fried oysters, butter lettuce, rice, kimchi, and banchan. Asked my photographer friend for some filthy food porn and all I got was this because we were too excited to eat.

So after that debacle with my rotisserie prime rib me and the GF cooked up the remaining meat off that roast via that YouTube video on the last page, results were amazing:
