Tuna salad sandwich? Add some small diced red onions and celery in there to give it flavour and crunchy texture.

Try Carrots, Tomatoes, Spinach, Broccoli.

What is he 2 years old?

I don't understand people who refuse to eat large varieties of food (ie. vegetables) unless it is a food allergy. Sure there's certain items that I'm not a big fan of (tripe comes to mind), but I wouldn't say that is a food staple, and I would still eat it if it was put in front of me.

Does he eat lettuce? You can make a wrap with leftover chicken/steak, cheese, lettuce, and any other items he won't refuse to eat.

Chili is a good idea because you can get away with no veggies although onions are usually in most chili recipes.

My G/F makes me lunch everyday its great and much healthier then the alternative.
May I recommend that you kill two birds with one stone. Make a nice dinner and the leftovers make for a great lunch.
Right now I'm eating pan seared cod with steamed veggies on the side.

I agree,

One of my cousins hates Mushrooms. Once I invited him over for dinner, and I made Fajitas with mushrooms in it. What pissed me off is that he ate like a fajita and a half before he realised there was mushrooms in it and then he put it down and refused to eat more.

I was like "Fuck, get over this psychological aversion to Mushrooms you baby, because you obviously thought it tasted fine until you saw it"

My gf doesn't bring me food at work cause she works quite a ways away from me, plus I bring meals for the day. BUT she does get me these cajun chicken wraps.

They're OSSUM! Maybe try making him something like that, paired with chipotle mayo its seks
