It's located in north van, there is no retail front. And the mark up from warehouse ---> your grocery store (ie: east end co-op/share organics/spud) is insane. |

guanciale is cured pork cheek. Its similar to pancetta, but it has a fat content closer to 70%fat 30% meat, where bacon/pancetta (made from pork belly) is closer to 50/50. Its awesome in pastas, where you render the fat out of it to make it kind of incorporate into an oil to coat the pasta with the other ingredients. Look up amatriciana for the most common use for it. Two rivers is just a smaller butcher/wholesale supplier that is extremely conscious of proper and humane farming, and carries meat from lots of local farms. |

Amatriciana is very traditional italian, but most places sub pancetta unfortunately. La quercia, La buca or Cibo would be my best guess.
