Now what to do, what to do...? Steak Tartare Trimming some grass fed brisket Freshly ground, hand formed, packed loose.
Blend of grass fed brisket, sirloin and ribeye.
All beef, no filler. Onions, caramelized with duck fat, bacon grease and beer.
(It's burger night, vegetarians are elsewhere, why make vegetarian condiments?) Burgers should have a crust.
Seeing might be believing, but hearing is knowing.
Rake your fork on the surface and you should hear the sound of greatness.
Grey burgers make me a sad panda.

This is the recipe I followed. Miso Coconut Chicken ? i am a food blog
It was amazing.
Most photos by Ronin/Ed Eats. If I don't move, they won't notice I'm here. Quickly steamed to release from shell. Meat is essentially still raw. Butter poached lobster. Butter poached lobster scrambled eggs, mini croissant. Agedashi tofu.
Sharing is caring. Steamed spot prawns.
Family recipe vinaigrette dipping sauce. Amaebi Sashimi (spot prawn). Spot prawn heads, friend and tossed with jiew yeem. Mussels, steamed with tom yum coconut milk broth,
finished with thai basil and cilantro. Amaebi sashimi salad.
Konnyaku, wasabi leaves, Persian cucumber, yuzu dressing.

Sockey on cedar plank. Zest, dill, fennel, shallots.
In the back, all that with aioli. Scratch made aioli, dill, zest, shallots. I filleted a whole wild socket.
Grilled the leftovers bits. Not waste. Orange, fennel and shallot cedar plank grilled wild sockeye. Smooshed new potato salad, grainy mustard, crispy fried onions. Red chard, baby spinach orange, more fennel, raspberry and orange vinaigrette. Fried mantou, sweetened condensed milk. |

Ribeye. Crazy high heat. Fire.
Grilled Korean short ribs.
They come pre-marinated from a Korean butcher and are amazing every time I get them.
Grilled smokies from a sausage shop near my house. They make and smoke
their own sausages.
Whole pineapple, cut into slices and grilled.

Pork belly, slowly braised in garlic, ginger, aka miso, shaoxing wine and mirin. Pickled my own menma. Made my own mayu (black garlic oil). The same stuff Jinya has as their special ramen. Tonkotsu Aka Miso Ramen
- Char siu (the pork)
- Ajitsuke tamago (the egg)
- Menma (pickled bamboo shoots)
- Corn
- Negi (green onions)
- Bean sprouts.
- Mayu (black garlic oil)
- Toasted nori (seaweed)
