XO Sauce

Who makes the best XO Sauce in town? And where would I be able to buy some for home?

Yeah, just make it at home, and make it in large batches then properly can it. It will last a few years. Much better!

heat up oil until it's EPIC hot.
get a bag of this;throw it in.
*************** do NOT do this INDOORS. you house fire alarm will sound and the puff of mushroom cloud of hot peppers are so intense, you clothing will smell for eongs


use as much or as little. everyone has their own thing, dried scallops, shrimps, garlic, ginger... ANYTHING you can think of, you need to pre soak it and then prep it eg// split every strand of scallop individually etc.


take the shells of the peppers out from the oil, discard peppers. throw in all the dried scallops, shrimps etc and heat it up, reduce and add seasoning.

When you're done, you're done and it should be


just remember, there should be a good portion of scallops, shrimps and whatever you want to put in there.

you need to add sugar, salt but please don't be a douche bag and put in MSG. I put in over 200 dollars worth of dry scallops alone + shrimp and about 13 different spices in it. The final result is about 6 jars of xo sauce which I send it to my friends all over the world.

^ the ham they put in is epic expensive. you could just not put any in.

i never cut up my shrimp because i want people to know i put in large ones and not just little charity pieces.

sorry, but this guy has shitty ass cutting skills and clearly his garlic overflowed the pan. Please be super carefuly when you make this (if you want to do it), the oil will over flow and when you do put in garlic / shallots, do NOT over cook it as it will for sure turn brown and create a burnt taste.

Pretty much all of Japanese cooking use loads of it... And everyone knows that these are the unhealthiest, fattest people in the world with the lowest life spans right!

lol. i was just reading about msg on wiki. like to share with rs ppl. i know msg in some sort is bad for our health but didnt know about any symptoms.

In April 1968, Robert Ho Man Kwok wrote a letter to the New England Journal of Medicine, coining the term "Chinese restaurant syndrome". In this letter he claimed:
I have experienced a strange syndrome whenever I have eaten out in a Chinese restaurant, especially one that served northern Chinese food. The syndrome, which usually begins 15 to 20 minutes after I have eaten the first dish, lasts for about two hours, without hangover effect. The most prominent symptoms are numbness at the back of the neck, gradually radiating to both arms and the back, general weakness and palpitations...[8]
The syndrome is often abbreviated as CRS and also became known under the names "Chinese food syndrome" and "monosodium glutamate symptom complex."
Symptoms attributed to the Chinese restaurant syndrome are rather common and unspecific.
While many people believe that monosodium glutamate (MSG) is the cause of these symptoms, an association has never been demonstrated under rigorously controlled conditions, even in studies with people who were convinced that they were sensitive to the compound.[9][10] Adequately controlling for experimental bias includes a placebo-controlled double-blinded experimental design and the application in capsules because of the strong and unique after-taste of glutamates.[9]

I put it on all my dimsum. I sometimes eat it as is when I wait for the dishes to come.

At home, I usually mix it in fried noodles or noodle soup.
