6 cups mashed potatoes
2 1/2 cups shredded cheddar cheese
Onion
Garlic Salt to taste

Place flour and salt in bowl. Mix water, eggs and oil together, then add to the bowl of flour and salt. mixing with a wooden spoon. Bogin to add more flour in order to make medium soft dough. Once you have got the dough in the right consistency, mix it with your hands until smooth and has aborbed all flour. Leave to rest for at least twoo hours before you roll it out thinly and cut into squares to fill. Put insides on middle and fold over into a triangle. Use your fingers to push the dough together around outside edge of triangle. Boil and then fry with Onions, butter & Bacon.

My friend's family makes the BEST perogies, he said the secret was the chill the dough.

I'm hooked on the Chemo perogies from Safeway...they have a bunch of cool flavours (sour cream and dill or something, four cheese, etc) and if you get them on sale, they're pretty cheap :)

buy low usually has a sale on those so look out for those

In Winnipeg Anne's perogie house some of the best around, nothing beats going to a place. Now being from the peg we had hunky bills same place that comes to the PNE every year. I heard he sells them out of his basement has tons of freezers stuffed full. You should look it up.

Everyone say it with me: "PIEROGI" not "PEROGIES". Pierogi is plural.

That's your polish lesson for today.

Oh yeah, the BEST perogi do not have egg in the dough. Egg dough is tough, eggless dough melts in your mouth.

You can have perogi with just about anything you want to put inside. Here are some different varieties:

Savory:
- Potato and Cottage Cheese (Dry Curd) <- Traditional
- Potato and Cream Cheese
- Potato and Cheddar Cheese
- Potato & Onion
- Bacon & Sauerkraut <- Also Traditional

Dessert:
- Blueberry
- Blackberry
- Peanut Butter and Chocolate Chip (My own creation)

Make sure you fry up some bacon & onions to top the savoury versions. Pan fry left-overs the next morning for breakfast.

Damn I'm hungry now. I got some of my mom's in the freezer. Mmmmmmmm.
