so lets say that you have 1 beer , and you get stopped at a roadblock. cop says "have you had anything to drink this evening" - if i say yes -- what will happen?

Yeah, probably. Might get asked when last drink, etc..

What I want to know is what happens if you answe "no", and then blow over?

Even MORE interesting is what if you answer "No" but you blow above 0.00 but below 0.05?

Maybe you used mouthwash?

Does mouthwash actually show up on a breathalyzer? Or is that a myth.

Well I mean if you did drink lightly earlier that night, but was several hours ago where it's mostly out of your system but there are still trace amounts left.

I was pulled over this weekend in a road block. The guy asked if I'd had a drink, I told him I'd had a glass of wine 3 hours prior (which was true) he checked my pupils with his little penlight and let me go.

I think generally they only pull you out of the car if you have symptoms of intoxication - you're flushed, your pupil reactivity is off, you smell like booze or what have you. I have yet to meet an officer at a road block who was unreasonable.
