last year there was a huge line up
saw a white kid holding three goat skewers, looked at the skewers skeptically, after he took the first bite, he called his friends rush their ass to the night market to line up at the skewer place so he could have more skewers lol.

Got there just in time for discounts tonight. After my first round, I went to the "Real Japanese Grapes" stand but he was all sold out. I gave him my best impresssion and he (and his wife/gf) were pretty cool about it and said they'd give me a freebie next time. I ran into them again on the other side, in front of the other crepe stand that claims they sell Japanese crepes. They guy goes, " They are not real Japanese!! Look!! They are Chinese cooking. " Got a good laugh out of it.
I had the lugaw/arroz caldo (Filipino congee) at Giorgio's stand for the first time and it's actually pretty good. Also, the stand to the right of the che stand (Vietnamese Rainbow drink) has really good lemonade. I wanted to try the banh cuon but could tell the wrapper was all dried out.

You know what would be my dream for vancouver? To have some sort of food-stall location, like a dai-pai-dong.
Imagine the richmond night market food area, but maybe 3x the size, running every night in a semi-centralized location. Like say... trout lake area?
All covered running rain or shine. Renting a stall there would be pretty cheap.
Man, sometimes I just wish somebody that got into office would give this city a better night life that wasn't just bars and clubs.

i think that sometimes too but when it comes down to it, what can the city bring to liven up the night life
we dont have the money, weather or population to pull off what other cities do

Well, if you look around the city, they are now turning corners of parks into community gardens. I at least know that the city isn't above juggling it's space and re-purposing it.
If you look around there are already some more creative combination spots such as King Edward village with grocery stores, banks and a library mixed into a residential complex. The city has also clued into the the civic-center model as found in Mount Pleasant Community center. It's offers a library, gym spaces, fitness classes and childcare. This is more of a mixed use public service complex.
Here's my dream proposal in the rough:
Purpose:
- An all hours mixed use entertainment complex for people that don't want to do the bar/pub/club scene.
- Promote local food scene. Low barriers to entry similar to night market and food cart project. Location:
Find a spot in the inner city, a building with a decent sized parking lot very close to a skytrain. Adjacent to a park would be ideal, but I'll take "close" to a park. The new Art Institute Campus at Renfrew and Granview seems perfect. It's next to a skytrain, commercial property so no neighbours to complain. And both the Van Tech park and Beaconsfield Park are within 6 blocks.
- Close to a skytrain so the city can promote green-ness. People won't have to drive there.
- Close to a skytrain so you don't get the sea of people that is the night ikea-to-nightmarket walk.
- Close to a park so you can pop by, grab some food, do a picnic, play ultimate, suntan or whatever people do at parks. Facility Layout:
- Commercial offices 3rd floor and above.
- Anchor restaurants 2nd floor (joeys, earls, malones?). This will allow them to have outdoor patios with a decent view without conflicting with the mood below.
- Maybe a fancyish restaurant on the top floor with a rooftop patio?
- Build a shed/like structure out into the parking lot. This would serve as the location for the street food, food carts and stalls (think like night market).
- On the main floor, would go local community service commericial tennants such as a pharmasave or a large corner store on the main floor of the building. It would be perfect to fit in a small produce market like Kins and a decent butcher.
Mixed office space as well as late hour activity will give more parking space buffer. Since the office workers show up first, they will be guaranteed to have spots. By the time they clear out and go home, people looking for entertainment after work will be able to grab the vacant spots.
tl;dr?
night market (non-chain food) + pike market (local produce) + some anchors like sports bars (revenu) + office space (maximize utility of space).
Stick it all close to a skytrain (green) and parks (fun). Art Institute at Renfrew sktrain station sounds ideal.

Money shouldn't be an issue since it's all commercial. City will just control the tenancy.
Weather should be ok. As long as it's covered and close to transit, it should still be ok.
Population should be a non issue too. I still need drugs, groceries and meat and sometimes to grab dinner on my way home. That little corner of Crystal mall is busy from breakfast time until it closes.
