Oh man, Fort St. John. What a funny place.
I went there for work once and the same thing happened to me. Went to the airport and the staff there stopped me at the security check point and wasn't interested in the 23 devices I had in my bag. Oh no. They were more curious about my, and I quote them verbatim, "Oriental heritage." lol

I recall staying at the Holiday Inn when I was there and upon checking in, the lady behind the counter asked me if I needed directions to the Chinese restaurant. I was like And yes, she was trying to be nice about it but it came off as sort of a WTF moment for me. I think back to my trip there and all I can do is chuckle.

That being said I can't tell you if they were being racist assholes to you or not. In my case they were being presumptuous in a "racist" way, but actually just overaccommodating.
Sounds like they were being dicks. In my case, other people who look like me have probably asked for a fork. In your case, would anyone actually request chopsticks to eat calamari?  | |

It may have been experience talking.. the server had probably been asked for chopsticks before by Asians who she knew weren’t locals/regulars and perhaps thought it might be a nice touch? Probably should have asked though.. but you’re in Ft St John so that thoughtful level of service may simply not exist
I’m a white guy and prefer using chopsticks for my calamari. I’ll go out of my way to ask for them when I order it.. Asian utensils for a greek dish makes perfect sense to me! 
The pasta on the other hand.. if it was spaghetti that might raise an eyebrow. Penne, fusilli, sure. Anything you can pick at, why not? I like myself some chopsticks.
That said, pho noodles are lengthy and I’d never dip a fork in that delicious broth.
Interesting topic to discuss indeed.

Our favourite local Chinese restaurant down at crescent beach is called Fong’s and they have a bunch of spicy options on the menu. Whenever we ask them to kick it up a notch, they’re hesitant to do so and it’s never quite spicy enough but still delicious. I’ve always thought they didn’t want to overdo it and risk a bad review but it remains as our go to. Still an awesome place though and I do highly recommend checking them out if anyone is in the area. Since covid hit they’ve shut down the seating area and only offer pickup or delivery as an FYI so grab a spot on the beach and enjoy.
We also have a local Thai restaurant where we’ll order Som Tum and they offer 5 different spice levels on the menu. After crushing level 5 we learned they also have “Thai spicy” which is off menu. The last time we ordered it our server said the kitchen staff were in tears while preparing it and they were thoroughly impressed when we finished.
Since then I’ve found a local grocer to grab our own green papaya and we test our limits by making it at home. No joke I have serranos, habaneros and birds eye/Thai chilies in my fridge at all times. Have some ghosts in there as well at the moment

What's worse is an Asian who doesn't use chopsticks properly. I'm left-handed. That is like a holy sin amongst asians. Not only that. I don't hold them correctly. I get strange, almost hostile, looks from other asians in a restaurant. Having said that, I'm really good at using the chopsticks. I mentioned this in another thread. At the church picnics, they would hold contests that involved moving soy beans from one bowl to another. I always won. Beat out those old ladies who thought a lefty was a devil's child. I showed those old bitties. My mom stopped the teachers at the school from punishing me for being left-handed. And...... I never held the writing instruments properly, either. My penmanship wasn't great, but hey, we use technology............... okay, one more. I hunt and peck on the keyboard. Hee hee.......
