I use Lightroom to batch resize/edit the pictures - then throw into Quicktime for an easy time lapse video.

I've used Sony Vegas 10, its really quite easy there's a setting you can easily changes the internal between pictures and you just drag and drop all the pictures into the editing space and it will instantly align them all,

Premier pro is also good
