A school program focused on the handling of carbon fiber alone would be too expensive to run, so I'm guessing that it would start out at an aerospace engineering course. Of course, that doesn't specifically focus on carbon fiber, so it might not fit your criteria.

I guess there would be other ways to get into it, but showing that you know your stuff (school) would definitely help you find a job like this.
