Came across this on Jalopnik, thought it was really neat to see the efficiency of these different junctions

That's from Cities: Skylines. TMPE and NExt are mods for it.

how can you use this as a realstic simulation if those cars are running through each other?

thats it, i'm going to sit at city hall until they change every intersection to a stack intersection.

It's neat, but I'm not sure how accurate it is when you can see vehicles using inefficient routes for no reason. People don't pull off the highway, go around a roundabout, and then go back onto the same highway instead of just going straight down the highway.

It looks to be set up so that the roads have equal volume and a lot of people are turning. Which certainly applies to some intersections, but a lot of them have one road that has more volume than the other, and most of it is straight through.
