House of Knives? I really dunno. Maybe talk to other students in your program, or the teachers?

What kind of knives do you want to buy? You can go to House of Knives, as they have both Henckels and Wustof brands. These are the two big German brands, the main difference between the two are: Wustof steel is slightly harder than Henckel steel, so it is a little bit more difficult to sharpen, but it will keep its edge longer than Henckel. I found Henckel way too soft, but that was in a busy restaurant setting.

well are you looking for quality or quantity? if quality, go to house of knives and get the german brands. otherwise just go to like some supermarket and get some cheap ones.

For the price of shun, buy hattori. Since I like whoring up my site, take a look at this:

Honestly i like shun, i have my own set and it works wonders. But the best thing to do if you going to buy the knives is to go try them out... actually hold them and handle it a bit because the handles will feel different and you may not like using certain ones.

Thanks for all the info!! Very helpful! The new House of Knives store which opened on Granville Street told me that they offer 20% off for anyone who's taking a professional culinary course or is in the restaurant business. They call it an Industry Discount. However, my course is just a hobby/night class so it didn't count. :(

house of knives is extremely overpriced

costco sells a whole set of wusthof (my favourite brand) for $299
better than buying the chef's knife alone at house of knives for $199

I think the knife set at Costco is Heckels.

oh you're right completely forgot!
but at least it's the better of the two of the henkels
one has two men and one has one man
the one with the double men is the better quality line if i'm not mistaken.
canadian tire sells the low quality and they're horrible.

Basic Stock on W4th is having a sale.. so is Ming Wo.
Since this is for a non professional setting. I can't see the reason you really need the best knife set out there.

was just at House of Knives the other day. When looking for a knife, look for one made using the drop forge process. Stay far far away from the stamped steel.

Definitely get Shun, the VG-10 steel is much better than those German's, yet still very affordable. I sharpen knives as a hobby so I have tried many knives from all the people I know. :)

Get a Wusthof and call it a day.
I've honed it ONCE in a whole month of use in a busy restaurant setting.
Cuts through Raw Primals and Fillets like butter.

Theres a place on broadway that has EVERYTHING u need in a kitchen even proffesional setting. Global knives are cheaper there too. I believe its 79 99 for the medium french knife and 89 99 for the HUGE one.
GET GLOBAL so sharp you ll get a boner
