I know this should be in the Dining section, but this page gets more hits.
Anyhow.
I'm cooking Pho for about 7 people this Saturday, and really want to impress this girl I'm semi interested in, who also happens to love Pho.
The net has billions of recipes but just wondering if anyone on here has cooked it themselves and found a recipe that worked out well.
Thanx!

Sorry to break it to you, but good pho is actually very difficult to make. The soup base alone will consume hours of time.

Anyone that knows how to make good pho would probably tell you the same thing. It isn't like making instant ramen.

This is actually my main fear. Back in Vancouver I read on the Pho Hoa menu that their soup stock was prepared by boiling beef bones for over 12 hours. The recipes on foodnetwork.ca etc say only to boil the bones for about 2 hours!

This is correct, the best soup takes hour and hours.
Either way, good on you for trying!

What you could do, is go out and buy a bunch of soup stock from a restaurant.
Then go and buy the rest of the ingredients (pho noodle, meat, beansprouts, meatballs, lime) then make it yourself.

you can buy the stock from T&T. i know it won't taste ideal, but probably better than you preparing it from scratch

Pho Hoa is probably the worst pho there is pretty much around here FYI.

pho broth is really uite easy to make...just remember to use high quality ingriedients. Head to a viet supermarket to pick up the bones . Another helpfull thing I do is to toast my spices wheneevr using dried spice. So if the recipe calls for cinnamon and star anise , dry toast ( basically stir fry with out oil on medium heat) them until they become fragrant. Also wheneevr making a clear broth never fully boil ...only simmer. Boiling will make it cloudy and taste ...dirty.
