like....wat?Lots of our customers leave cars with us that don't have insurance. Pretty hard to insure a car that doesn't exist yet (like a restoration of a classic that isn't even in one piece yet). One customer dropped off a car that was literally a bunch of boxes of parts.
Our garage policy covers these vehicles. In 4 years I only remember one claim being made, and it was a doozy. $100K+ fully custom hot rod had a sticky throttle and was driven into the back of another car. Expensive repair bill (about $20K) and we used our policy to pay for it.
As far as I'm concerned, any shop with the sign up "not responsible for damages" is not worth dealing with. Or perhaps there's a reason they won't cover damages (like not having/unable to get proper insurance).
If you don't have a bunch of yahoos working for you, then accidents are very rare, and therefore, claims are rare too.

It's called markups. Obviously, if you spend a significant amount of money, anyone would be willing to cut you a much better deal. Hell you can talk to a manager at a retail store to give you a deal for buying a large quantity of merchandise ie: christmas gift baskets.
