looking for a couple to build a repertoire, what sorts of simple soup bases do you guys use
I actually buy those Little Sheep packs from T&T/Chinese Grocery Stores ... the Spicy one is pretty good ... their catch phrase is that you don't need dipping sauce when you use their soup bases ...

BINGO!!!!
I had such a hard time finding someone at a Chinese grocery store to tell me what to get.
That's the satay sauce you get as a side, isn't it? I bought a can yesterday but haven't opened it yet.

When I go have hot pot at the restaurants I usually order half/half - one spicy soup and the other one regular chicken stock base or the chicken stock base + thousand year old egg + cilantro.
It's actually pretty easy to make.
Make your own stock or buy campbell's chicken stock and add the egg + cilantro.
As for the spicy one I have no clue how to make that one.
If you are feeling lazy just go buy the LKK (Lee Kum Kee) ready made hot pot bases. All you have to do is add water and boil.
I think in the end the hot pot soup base doesn't really matter its the sauce you have (soya, sesame, bull's satay sauce, chili oil, green onion, ginger, cilantro to name a few)

I have a half/half bowl as well as a full bowl here for DIY Hot Pot and the half/half bowls are a bitch to clean, especially if you have those that have the middle barrier that only fold one way ... the other side of the fold can gunk up if you don't clean it properly ... just annoying ... something to think about I guess if you are looking to buying a bowl for Hot Pot ...
DIY Hot Pot = Win :)
