: Green curry chicken stew - stupid easy

For dinner on days like this, where it's kind of miserable out and there's a good game on TV, here's a quick dish that you can work on during intermissions. It's quick, simple and great for tomorrow's lunch.

Ingredients:

* 8 skinless thighs (thawed)
--I leave the bone in for flavour, you can use drumsticks too
--I buy a big pack of thighs from Costco and separate them into smaller portions before I freeze them.

* 1 large turnip or 2 small ones
-- you can sub w/ potatoes
--3/4" cubed

* 3 carrots
--peeled and cubed the same size as turnip pieces

* 1 can MaeJin Thai Green Curry w/ Vegetables
--available at T&T

* 1 can AROY-D Green Curry
--Superstore or other Asian markets

** If you can only find one brand just use 2 cans of it

Hurry up, the game's about to start!!!

--in a stew pot put your chicken in with enough cold water to cover it and then some
---medium/high heat, covered

Watch the 1st period.

--once water comes to a boil, turn it down to a simmer

--1st intermission, check your water level and top up if needed

Watch Team Canada or the Canucks kick some ass in the 2nd.

--2nd intermission, drain most of the water, leaving approx 1.5 cups
---add veggies and both cans of curry
----medium heat, covered
---make some rice

Watch us shut it down !!! LUUUUUUUU!!!

--by the end of the game your stew and rice should be done
-just check the texture of the veggies to your liking


Thai Curry Chicken on a bed of rice.
*note: no seasoning. The sauce has a bit of spice and I've always found it not requiring additional salt or pepper.


Enjoy your meal while watching highlights or when the GF changes it to American Idol.

now i wonder what it takes to make sauce yourself without using can stuff. I know most ppl buys those JDM curry chunks, and self mix in with water. Which i aint a big fan of those. Thai curry consists of coconut milk in it which makes it more yummy than your traditional curry

You can make it tomorrow and Sunday, when Team Canada plays. Otherwise, you can only make it during an Avs game, since they have a Chinese player.

Can't find USB for my D40, sorry for no pics yet.....

I should post pics of my made-from-scratch traditional green curry.. The paste is made with a mortar and pestle. I go down to the Thai part of town (Kowloon City) for ingredients. It's amazing.
