Pointers to what to do and what not to do will be excellent. I work as an economist in a policy unit, so my theme is - building a bridge to bridge the knowledge gap.
Is this related to the GCWCC? It is that time of year, after all.
I was involved in planning and putting together our floor's green. We had a theme (as you have) and made a series of obstacles using office furniture and a few items from home. The people who played our hole (including golfers) seemed to enjoy it, so I think as long as you make it challenging, you'll be good to go (i.e. don't use a standard mini-golf putting green which is kinda lame.)
Oh and another thing: make sure you run fairly extensive trials before you invite people to play. You don't want people to complain about the course being impossible to complete within a reasonable score.
