I'm not 100% sure but someone mentioned that right now is King Crab season again! ...

So is now a good time to feast on some Garlic Sauteed Crab at a Chinese restaurant?

Anybody recommend a good place to enjoy it???

2 years ago I went to some small restaurant on Kingsway that was advertising $8.88/lb but the crab was not meaty at all... so I'll probably have to un-ghetto myself for some truly amazing crab this time around hehe...

It is King Crab season. (Apparently it is in season twice a year.)

I had a huge 13 lb one at my gf's place made by her parents. They hacked it up alive, steamed it, cut the shells open and poured tons of chopped garlic all over the inside meat. Awesome.

The juices were all saved up and used to make noodles.

King crab congee was good too.

This one was just normal colored, though. Last year's had a blue shell and the flavor was magical.

Looking forward out for king crab on my birthday soon.

Flip open the chinese newspaper....to the restaurant section,
and you'll be able to find at least 25+ restaurant advertising
about the Alaskan King Crab. The season price is anywhere
from $10.xx to $16.xx / lb lately. You'll need to be getting a
minimum of 8lb. Any smaller than that, there won't be much meat.

Go with a group of friend or family. At least 5-6 people.

Try one of their "packaged deals" It's usually around $150-200,
and you get the king crab done in 3 ways, along with 2-4 other
dishes, along with the soup.

If you can't decide which restaurant to go to, try Sun Sui Wah,
heard they were the pioneer with live crabs.

I find that u really have to go up to at least 12-13 pounds to get some real meat. Anything less u'r just paying for the shell.

My goto place for King Crab...and don't laugh is Congee Noodle House on Broadway at Main. They do an amazing job, I kid you not! IMHO it beats Sun Sui Wah and Kirin easily. The only downside is that its a cash only restaurant which when it comes to the cost of a King Crab meal might require some planning. I was just there last week, the crabs were $13.80/lb and done 3 ways. Enjoy!

I went to Kirin Starlight.

Pretty decent...large portions, always good and polite service, had it done 3 ways, garlic, some deep fried spicy kind, as well as used the head shell to bake a Portuguese creamy style rice.

All in all, pricey, but good.

Went to Always Seafood Restaurant on Main Street, we had Alaska King Crab 3 ways, $9/lbs and ours was about 12 lbs. Had ours done 3 ways, King crab legs in garlic, deep fried with egg yoke and fried rice.

The place was pretty expensive, bill came to about $250 for 4 people + 2 other dishes

I recently had king crab at Sun Sui Wah, and it was also done 3 ways. Absolutely delicious! Steamed with garlic, deep fried and portuguese fried rice. Servers were very courteous and prompt. I definitely want to revisit again before the season is over! :)

Deer Garden in Coquitlam - done 4 ways
I always see all other restaurants only doing it 3 ways.

I think the flavours can be:
garlic, chinese wine, ginger/onion (legs) x2
curry, salt and pepper (fried body) x1
fried rice with portugeese sauce (shell/head) x1

I've only had "spicy peppery salty" aka jiew yeem.

Is the curry, salt and pepper like deep fried, then tossed with curry powder and spices?

If you've got shell/head with the Portuguese sauce and rice, how is the shell/head integrated into that dish?

If you've got pictures, please sure, I would love to try and tackle a king crab recipe this year while they are still in season.

im sorry, but i just have to LOL at a lot of these posts

i run a seafood wholesale company. i supply sun sui wah, lucky tao, shiang garden and a lot of local seafood retailers with live king crab. my company is one of the big 4 live king crab suppliers in bc.

EVERY restaurant you go to will scam you. some more than others. you cant look at just the price. trust me.

for example, Sun sui wah restaurant, is charging $16.49 per lbs. the absolute most they will scam you is approx 1 lb. the food is great there, service is good, ambiance is good.

another restaurant, be it, fortune garden, lucky tao, imperial court, will charge, say $10.99. BUT, on average, they will scam you MINIMUM 3 lbs.

you go to these "cheaper" places, it still works out to be approx the same. but you are missing out on better food/service

ANY restaurant that tells u 13 lbs+ is lying out their ass. 90% of ALL catch so far this year in alaska is under 10 lbs. and at that, the average weight of king crab in vancouver is approx 6.5-8.5 lbs.

The question then comes down to.....how can customers prevent themselves from being scram? You simply can't just get them to bring out a scale and weight it in front of you. (well you can, but many restaurants won't) Even they do show you the live crab before cooking / weight it infront if you, this won't stop them showing you one crab, and cooking another smaller crab. :\

THIS. very true what you just said. no restaurant will actually bring you a scale to show you. and if they do, they will almost certainly switch the crab when they cook it. ive personally seen this happen.

all you can really do is, go into dinner KNOWING that you are paying for more weight than you are actually getting. i mean, whoever is going out to a chinese seafood restaurant for live king crab isnt poor, or living paycheque to paycheque. so go in knowing what you are paying for and not worrying about it, and you'll have a good time and enjoy your dinner!

ps. you can always buy live king crab from me, and cook it yourself. you can even look at the scale when i weigh em lol :p

Got the good ole bait and switch from this place years ago: Top Cantonese Cuisine Restaurant
http://c2.urbns.pn/w/s/oQ/tkUqedCAHJzIj7-640m.jpg

Ordered the fresh geoduck and they did the standard show you what you're getting, how much it weighs blah blah blah. Not two minutes after they showed us the live one, the dish was prepared!

We complained to the manager right away and he did not provide an explanation. After 10 minutes of the staff and manager trying to avoid us, we just walked out and never went back again.

Just go to a reputable place or somewhere where you go often enough that they know you. And never go to the place I mentioned above.

LOL did you even pay or was this a straight up dine and dash?

It was the first dish that was served. When we didn't get an explanation and left, nobody dared stop us cause they knew they messed up their little scam.

We didn't touch the dish either, just let it sit there.

Funny thing is, the whole situation could have been avoided if the manager just said the dish was for another table and brought it to us by mistake. But he was adamant that it was our dish.

I think the curry is similar to the curry crab you get at Tropica. The fried rice thing is nothing special, just like any other restaurants. The shell is used as a "bowl".

the restaurants i do supply currently are

shiang garden
sun sui wah richmond
sun sui wah vancouver
lucky tao
kirin

we used to deliver to all restaurants in richmond, but as you know, chinese ppl dont like to pay right away, and like to drag on paying as long as they can. so we decided no more lol

Actually, prepping it at home isn't that big of a deal. Provided a couple things.

- You know how to handle regular dungeoness crabs. it's almost the same.
- You own a quality pair of kitchen shears.
- You have a large vessel capable of steaming a dish full of legs.

Our family has done the simple prep lots of times.
We just don't do the other courses of using the drippings to make a cream sauce for noodles.

We only do that for lobsters.

Holy crap. How does someone turn out to be such a little snot like you? Your parents epic-ly failed in raising you.

I know that people often carry that amount in their wallets, and good for them. But does it not seem wiser to you to spend on a credit card that you can gain some sort of benefits from, whether it be points, cashback, or simply up to a month of free credit?

I don't know how people like you even have any friends left with the way you constantly show off and try to make yourself sound superior to people, not realizing that you make yourself look like a complete dumbass.

neptune's food is decent tasting. however, and its a big one...

neptune closed down for renovations a while ago and re-opened. prior to the renovations, they had, hands down, the absolute, grossest kitchen ive ever seen in my life. i would almost puke everytime i would go in there. i dunno how its like now, but i figure it wouldnt be much different. it was gross like that for years and years.

also, the owner is one of the biggest assholes in the restaurant industry. we would sell him crab or lobster, and then he would, on his own, deduct weight from the invoice because his tanks suck and product would end up dying. would never do business with him again, thus, i would never visit that establishment.

^Can I buy a crab from you but go to a restaurant to have them cook it? Which restaurants?

from my experience, restaurants will only cook the seafood you bring them if you have a good relationship with them, so i guess the answer is YMMV.

if you do have a restaurant, that you frequent, that is willing to cook your own crab, i'd be more than happy to sell them to you.

Obsideon
03-22-2011, 12:08 PM
I'm assuming the restaurants will probably charge you a lot more extra to match their own pricing so it's probably better off to cook it yourself or just order it from the restaurant?
Plus like bigrig said you will definitely need to be on excellent terms with the specific restaurant if you expect them to cook the food that you bring them. There could be health issues involved as well as they don't know what you have done to your food before you gave it to them to prepare.

sea harbour is good. however i dunno how their "scamming" system there works. havent been there in years. but i would imagine it wouldnt be too bad, since they do cater to higher paying customers.

and FYI to those who maybe wondering why my price is at my price. yes, T&T and osaka and maybe a few of those smaller grocery stores had a promotion last week for $10.95-$12 per lb. what you should know is that ALL the crab those stores carry, are "rejected" crabs from all of the big king crab suppliers, us included. they are either soft shell, low meat content, missing legs, weak or a combination of all of them, thats why they can and did sell for that cheap. as of today, T&T is selling for $14.88 per lb.

not necessarily. it would depend on the restaurant. what im sayin is, for the most part, the king crab you see at T&T, osaka, supermarket 2000, empire etc is all 2nd grade or 3rd grade product.

if you were to ask me which restaurants have the best quality king crab (taste and price aside) i would recommend:

sun sui wah (rmd or van)
kirin (any of them except for coquitlam)
shiang garden

and, no. price doesnt necessarily mean one less way of preparing it.

pricing at sun sui wah, kirin, sea harbour, jade, shiang garden differ greatly from those at say lucky tao, fortune garden, continental, imperial court.

and just so YOU know, since you think you know everythin...the lower the price of the king crab, the MORE they will scam you. restaurants that set their selling price higher, cater to customers who can afford more. they dont NEED to set a low price to get ppl into their restaurants and at the same time, dont wanna fuck over any of their existing customers.

yup. canadian spot prawns start may 7 approx. but i will have us prawns starting april 4th. (same thing)

prawn prices, hard to beat retailers like T&T, since they go direct to fishermen, but im sure i can do like 0.25 cheaper and i can guarantee my product is even more fresh than what they get.

my other main product is live dungeness crab. we have those all year round

Yeah, my family is in the fisher business too. I get crabs all year long and stuff. But it's the prawns that I die for.

AMAZINGLY fresh, so lively, they hop everywhere.
We just do them as sashimi, shell them, pop them in the freezer for just a couple minutes until their muscles lock up. They taste just BEAUTIFUL.

yes, you can eat prawns raw. a lot of fishermen, eat em like that right out of the water. pull the heads off and eat. its great!

im going to BOLD and enlarge the following just so you are all aware. VERY important information for ppl who like to eat seafood, especially raw seafood!!!!

you wouldnt get food poisoning from prawns, if the areas that they are fished out of are open (by the DFO - department of fisheries) and the holding tanks on the boats are clean and free of any e-coli or staph bacteria. fishermen and suppliers alike abide by strict provincial, and some, federal rules and guidelines.

food poisoning in bivalve shellfish (animals with 2 shells - ie: oysters, clams, scallops) happen more often than food poisoning in other shellfish such as crabs, lobster, shrimp, prawns etc.

with bivalves, the rules and guidelines are even more strict. (also harder to get a license to process bivalves, than to get a license for fresh/frozen processing of live crabs/prawns/lobsters). In bivalves, there is a risk of PSP(red tide) and sanitary contamination. every step of processing (picking, storing, transport, receiving, storing, distribution) is closely monitored to prevent or lower the risk of food poisoning.

it's important, when buying seafood for consumption in raw state, you buy from FEDERALLY licensed and established companies(if you are buying direct). there are a lot of seafood retailers, distributors who are only PROVINCIALLY licensed and those facilities do not have as many checks and monitoring procedures for their products.

When you eat spot prawns raw, can you eat the head and brains raw too?

I do it at sushi restaurants but kind of scared to buy a pound of prawns at my local seafood store and eat it like that myself. It's like... Drinking the tank water if you eat them raw.

that i dont know. i would prob advise against it lol

if you are buying sashimi grade frozen prawns, and you thaw them out, you can eat every part of the prawn when it is thawed. if you are buying from a seafood store like T&T or one of those smaller seafood retailers, i would def not try to eat the prawns raw. but if you were to buy from me, or any of the other federally licensed seafood processors, then you should be safe.

we all have our water tested regularly, and have UV systems installed that kill any bacteria present in our tanks.

Finally went to get king crab. Went to congee noodle house, haha. Crab was good, but they ripped us off about 3lbs I'm estimating. Basically was I think 13.88/lb, they said 11lb but I'm sure crab was no more than 8lbs. Added $20 for 3 courses. Damn hst made everything over $200, but crab was very good. Will probably go once more but will try a different restaurant.

Last Friday we made reservations to try out Lucky Tao, it would be our first time eating there. That place is a zoo, bad first impression; terrible, terrible service. Even though we made reservations, it meant nothing. In the end, we left w/o eating there and I'm not sure I will ever go back; while waiting outside I decided to call Sun Sui Wah (which is across the street and where we usually go) to see if they could fit us in, they could so we went there instead. The Alaskan King Crab we had was great as usually and the service was awesome. Talking to the owner, he said they received one 15lb crab last shipment and he showed me a picture taken with his cell phone.

FWIW, they are selling their King Crab for $16.99lb at Lucky Tao it was $11.99; Sun Sui Wah said the price should be going up soon!

My father does a lot of blast freezing and cold storage for most local large seafood processors.

bigrig.... if its not too much trouble with you. It would be nice if you take a picture of a 6lbs AKC, a 10lbs one, and a 15lbs one. So RS members could tell the difference between the different size. It might not be dead exact...but at least we would have a general idea :)

what company does ur dad work for? theres not just one company that supplies japan or asia, and it wouldnt be true if he said he supplied MOST of japan. no way that one company can handle that.

and a lot of seafood processors blast freeze themselves. if you said ur dad worked for corpak or versacold, then yes, they store alot of the prawns destined for japan, but he DEFINITELY does not blast freeze and store MOST local large seafood processors.

i will try to take a pic tomorrow afternoon or wed morning when my next shipment comes in, (hopefully we have some of those big ones). my last 3 deliveries, all crab were in the 9-10 lbs range.

i can do an RS special for prawns. but wont know what kind of deal i can give until i know what price is.

the oysters that i can get are only small, med, large sizes. if you're looking for the specially small size oysters, your best bet is lobster man in granville island.

brown king crab season ends when the quota of 600,000 lbs gets caught. usually ends at the end of april or so.

when this king crab fishery ends, i bring in king crab from russia. my company is the ONLY one in canada that has live king crab (brown, red and blue) all year round.

there are no culinary differences between the 3 types of king crab.

the brown king aka. golden king crab have less meat content than red king crab. (thats why they are a lot cheaper)

red king have harder shells, more meat content and imo, sweeter.

the blue king is caught in deeper waters than both brown and red king. meat content is similar to red king, however their shells are softer.

red and blue king are usually fished and distributed around oct to january.

How do you guys eat the head/shell when it comes on the garlic-steamed plate? I pick off some of the meat in the inside, but there's a clear film/membrane that I peel off first. Is that all?

When eaten at a restaurant, 95% of the time the head will be used to act as the fried/baked noodle/rice's container. Not sure about the ones that prepare it at home themselves though...

I thought they just bring the garlic-steamed head/shell back into the kitchen and bake the rice after... Granted, I rarely have the baked rice course so I could be wrong.

When I went to Steveston last weekend they did look smaller, but I had some for dinner tonight that was from T&T and most were medium sized, a few large, and a few small.
