I thought a saw a thread in here a while back... can't find it... oh wells.

SO where can we all go to get some fresh, juicy, delicious prawns?... I'm guessing a lot of Asian restaurants will be offering them, where is the best bang for your buck? (besides cooking it yourself at home obviously)

This is the third attempt.

Yesterday, I said they seem to be smaller this year but still very tasty.

If you buy from your local super market they are bound to be a little smaller unless your lucky. Reason being is because distributors choose the bigger prawns and sell them to restaurants at a higher price. Try some specialty seafood places, there is one inbetween 50th and 51st on victoria right next to a meat shop I can't recall the name the place tieen way or somethin iuno.

That's Tin Wun and yes I think they distribute to restaurants. I go to Easly a few blocks down. They do retail and supply restaurants too I think.

It's better to but from the smaller shops. Sometimes my mom gets to pick each one herself. Haha

I've been getting mine from the fishermans warf and the lobster man in Granville island. Both have a decent amount of large prawns per pound, they are live and sell for $12/lb.

Looks like prices have risen again to almost $20?

What are the rates at restaurants anyway?

Take off the heads. Once they die, the heads do voodoo magic to the body which turns the flesh to mush.

best way to eat these is to boil them and dip in sauce. Make the sauce by mixing chopped green onion and jalapenos into soy sauce, then heat up cooking oil and once hot just before it starts to smoke, pour it over the soy sauce mixture.

Juices running in the head???? Dude do not cook these with the heads on, it's ruins the texture of the meat in the tail big time!!'

Try this... Take a few prawns and take the heads off, also keep a few whole and boil both for a couple mins. Once done try both and see what's best, hands down the heads off will be meaty and juicy... The heads on will still be meaty but will be a bit smaller and mushy on the outside.

Headless, tail only on it's side. Save the heads for another dish.

Cooking with heads on is the norm for most people but it negatively affects the texture of the meat in the tail.

What I do is take the head off of course then I mix butter, tons of garlic and franks hot sauce in a frying pan then toss the prawns in. Cook until pink and they are ready to eat.

I grab french bread to dip in the sauce and it's so tasty. I make it for parties all the time and everyone loves it.

When I was still working at Thrifty Foods we used to get them and some of them would still be alive. At first they were pretty big but I found the following year they were quite a bit smaller. Anyhow if you want good quality I would recommend thrifty foods, call first and ask if they have any and to keep the head on them if you would like. But thrifty foods is kinda expensive haha.

A marble in the heart recipe good with basmati.

In the pan cook up some chopped bacon,
Add some dijon mustard and a bit of crab boil.
As that's cooking add 1/2 stick of butter and some minced garlic.
Once it's bubbling along insert peeled spotties, barely cook the spots or vulcanising shame will ensue.
Serve on rice, pronto.

This is good with IPA beer or a Gewurztraminer wine.

A ceaser salad wouldn't hurt either.

On a side note, when I had prawns in China, they were very small in size and the shells were very soft. I could basically eat the whole prawn with the shell. Went to T&T at coquitlam mall and bought them for 13.99/lb.

They had two tanks. The top tank had fresh ones (prawns moving actively) and the bottom tank seemed to have old ones (prawns barely moving). Make sure you ask them to give you prawns from the fresh tank only.

Use the leftover prawn heads to make a prawn stock soup base. Would go well with Seafood Noodle Soup.

Prices won't go down, they are spot prawns which are only caught for two months out of the year, even for me i buy them off of my seafood wholesaler for $10 per lb. And I would stay away from the stuff u can buy for less than 10 because to normal people you won't know how to spot the good ones from the bad ones. There are these white spots on the prawn which mean they are almost about to die. Its hard to explain. Anyways... There's a seafood place on like 50th-51st and victoria its a chinese seafood store check it out. Its called tien wun I believe. The last time I went there they had some pretty decent prawns

T&T and Chinese seafood stores sell for $14 a pound. The one on Victoria is pretty good, also Superstore sells for a couple dollars more. I heard they were going for $19 a pound at Londsdale Quay. Still the best deal without a hook up is Organic Ocean at fishermens warf, at $12 a pound.

1. boiling water
2. drop prawn in with a drainer

4. wait for water to boil again
5. drop prawn back in with a drainer for 15-20 seconds (~1.5-2 lbs)

Tear off the head.
Grab prawn with 1 hand with the belly facing towards your face.
Other hand pry with your thumb where the main shell meets the legs on the belly.
Do this 1 section at a time, then proceed to remove the legs.

I hate getting my fingers poked.

My family recipe for boiled shellfish is like a vinegery dipping sauce.
Lots of ingredients, but it's all random stuff you would find in an asian home.

Kick from: Finely chopped red chilies, garlic, shallots
Sourness from: Rice wine vinegar, lemon juice
Salty from: soy sauce
Aromatic from: sesame oil
Body from: mirin (this last one is my own addition, my parent's don't use this).

Is the festival a must try type of thing?

Absolutely overpriced for what you get.

Like skholla said, you're way better off with just buying your own spot prawns and using Robert Belcham's way to cook them.

If you want to be fancy and you get live shrimp, put them in a bowl and give them a nice rose wine bath from BCLiquor (instead of the salted version at Asian supermarket).. then just blanche them. You can finish it with egg white if you want. This works the best as the shrimps are still alive, my friends and I do it on the boat just on Howe sound. The shrimps just go into toxic shock, as the alcohol gets into their bodies. there are so many oyster mushrooms now you can make an easy meal / picnic. They are so easy to catch, just drift and with pretty much any net you will easily get a dozen or so, heck even with a sea kayak. Then use fresh pasta to catch to sauce.

If you want to eat with the shells too, flambe them with a bit of oil and higher % alcohol, with some brandy or whiskey. Do the math first, as getting mass to ignite require quite a bit of precision. I find it the best to do it with a Pyrex bowl, as you can see the fire going to adjust the air fuel ratio.

I use

Soy Sauce and Garlic

for an awesome sauce for boiled prawns, try my recipe. Finely chop fresh red chilli and green onions, then pour into soy sauce, finally heat up 5 tablespoons of oil REALLY hot, then pour the hot oil onto the soy sauce/chilli/onion mix. Be careful not to burn the oil but you have to heat it enough to almost smoke. Best sauce for spot prawns

When will spot prawn season be and what do you think the prices are going to be like? I think last year the lowest was around $12-13?

It should be anytime now depending on ocean temperature until end of May (that's when the larvae are laid and adults mature and die).. Shrimps have a 4 year life cycle.. also note real spotted shrimps should have at least 3.5cm main shell and at least 2.5cm tails.. any smaller it is not spotted shrimp or it is an illegal catch.

Honestly shrimp season is all year round.. I rather have them March -> April that's when the shrimps are not moulting. Having a festival is just a trick to get people excited and sell old and dying shrimps.

Depends when and where.. when the sun is out, the spot prawns can be caught with a net in shallow waters when they are feeding.

Else you need a crab trap. Compare to fishing, it is like shooting fish with a barrel.

The catch limit is twice a day for recreation.

Once you have done it once, you will realize how much they are making selling $10+ pound.

I find it more enjoyable in the great outdoors when there is food involved.. actually I am pretty happy that no license is need for hunting feral pigs!

deep water 200-500 feet deep, rock sea bed you kind of need to know your spots. i work in tofino and there are a few boats i trade my dungeness crab for prawns!! cant wait!! =D usually i need to give some cash ontop cuz prawns are way more expensive then my crabs! two years ago i used to supply a prawn/crab distributor and was able to get wholesale price... 80 bux for 10lbs!

planning to grab a few prawn traps myself.. but the area where i catch my crab dont have big sized prawns and going to the spot i know in fortune channel is out of the way

The Spot Prawn festival is to celebrate the opening of the Canadian season (which opens first week of May ends Mid-end june/july depending on catch)

The season is NOT anytime now until may.

Should get your facts right before trying to educate others

*sigh* Commercial of course there are a season because there has to be enough for them to catch to be viable. Recreational? Not so much.

Check page 107 or Appendix B of the DFO report. It is not species specific but close enough for most in our general area.

Recreational sport fishing will always complain that the stocks are depleted due to commercial overfishing. In Canada commercial shellfish fishing is one of the most sustainable industry's in the world compared to other country's.

Thing is recreational fishing for fun they don't understand that these shellfish and prawns migrate and change areas due to where to food are.

Cassijon what does your family do in the seafood industry?

Which wharf do you guys buy at? I've went to Steveston several times, but none of the spot prawns are live.

I'd much rather buy from TNT, Pricesmart, etc and buy the live ones at about the same price.

Fishermen's Warf @ Granville Island, spot prawns are live from that days catch, usually sells out a few hours after the boats come in for the day.

It's sweet, juicy and succulent and contains alot of "meat". Between the Dungeness crab and Spot Prawn (for the same price), I'd choose the latter any day.

I remember there used to be a guy on RS that owned a seafood distribution business or smth
and I remember buying spot prawns directly off of that guy, and it was really good and he gave me a pretty good price too (cheaper than tnt for bigger and better prawns)

but I think he got banned from RS for selling prawns lol....

Ask the guy that sells it to you. From my knowledge Tnt superstore buys from a wholesaler in van that buys from the states. If you goto your mom n pop shop should be Canadian. I'll let you guys know when the season starts our market will be flooded with Canadian prawns and wholesalers will avoid buying from the states

Whats the best way to boil prawns without overcooking them?

Chef Robert Belcham, famous for his Spot Prawn Boil at Refuel (Saturdays during the month of May) taught me his simple secret to some of the most succulent prawns ever: Just pour boiling water over a single layer of prawns in a roasting pan until covered. Wait 5 minutes, peel and enjoy.
