i found a bnib imac mc510c/a (last-gen) that has been heavily discounted in price because it is the french model. besides the keyboard and literature, how hard would it be to convert it to english-only?

Too easy. Just change the language in the settings. OSX has all the language packs built in.

i am not a mac user, but hoping to be one. i'm sick of my pc issues...
what little i know is that snow lepoard is pre-installed, and for $30 i can upgrade to lion. can i just overwrite with the new lion, and get the optional cordless english keyboard and voila (bad pun sorry)?

If you've changed the language setting for both the OS and the keyboard map, then yes.
