Where and when to buy Sea Urchin (uni)?

As topic states...
I'm only aware of Steveston Fisherman's Wharf and Lobster Man on Granville Island.
But it seems it's in season, but can't find it anywhere. I called a number I found online and they said they won't be back at Steveston until Spring. Lobsterman doesn't have anything. I found ONE there a week ago.
Where do the Jap resturants get their live supply from?
angel seafood should carry it. u won't find it in the fridges (well since their fresh) so ull have to ask the cashier or one of the people working there about it.

^Agreed. Very incredibly messy and dirty inside. And feels awful cracking up a live animal to feed off its gonads.
It seem like most places that do sell (angel seafood and Sung Fish co) and suppliers to sushi places. Buying 1-2 sea urchin worth of prepared uni would be welcome?

Yeah I got one from steveston last year and it wasn't too hard. I poured out the guts into a sieve and just picked at it while watching tv lol

i almost stopped eating UNI completely after preparing my own, almost :ilied:
i find the ones in the trays taste better than the fresh ones, is it just me :okay:

fresh ones from sushi hachi actually tastes the best. dunno how they do it, but it just tastes better than any other sushi restaurant i've tried.

After finding out I can buy 3-4 Big uni at steveston for like $10. I stopped paying $16 for 1 UNI outside.
i will have 1 piece of sushi for $3 though, go figure lol

I meant more like mercury levels, etc.
Turns out they're in the low end.

Not in season.. basically fisherman dive for local (Vancouver Island) uni when it gets colder and crabs are scarce.

Would like to know of current uni sources. I usually just buy it from Fujiya, comes in the standard white plastic package with see through lid for $25.

Yamato Trading on Parker Street. Two blocks west of Fujiya.
They supply the uni to local restaurants (not 100% sure if fresh or frozen). It is a wholesale outfit, but they take cash sales. Open weekdays normal hours and saturdays until 2:00 pm? Place is owned by Canadians of Japanese origin.

Yamato told me they don't do retail (said it's coming, but not ready yet). They call you when they have it and you come in. Seems not very convenient to me (what if I dont plan to eat uni that day). Also they said they "get it from the plant". Doesn't sound like they process them in house which makes the fresh thing questionable.
Ended up picking up some live ones from Lobster Man. Got a male one that jizz out white sperm to boot. :fullofwin::heckno: Cleaning it is pretty easy, just use a kitchen scissor and cut right around the bottom opening and scoop everything out. Seems to be the easiest way (thanks YouTube).

Ok so back to Yamato. Mayube jtrinh got it for $15 I have no clue but I called today and this is what they told me.
- They don't normally have it just laying around for you to walk in and grab
- You place an order and they call you when it's here or you can also pick a day for pickup
- It's $19 for a tray
That's all I got for now, placed an order for the 23rd, we'll see.

Picked up my order to from Yamato. Looks, good! Taste on first tray thus far, fantastic.
Note, was quoted $19/tray but today they said prices went up and they are now $23/tray but honored the quoted price for us in this case.
