Which do you use ?
Does anyone know where to find Lee Kum Kee pork bone?
Found it at T&T before.. not sure if they still have it.

We just uses can of Chicken broth now

I think China World in Richmond sells the Lum Kum Kee Hotpot bases. I'm gonna swing by tomorrow and pick some up. Not sure why these are so hard to find now.

+1. I usually either use tom yum with chicken broth or I make herbal chicken stock. For herbal chicken, just go to any herbal store and tell them what you're making (roughly $10 for the whole pot), chop a chicken and boil. With either stocks, start with some canned chicken broth or add the powder if you want the strong restaurant-like taste

I sense a smoke and eat opportunity here.
Last year I went with the Lee Kum Kee packets of hot pot broth. Satay was one of them and they had other packets of ready-mix stuff like lemon chicken and stuff like that. There was also another for mushroom and chicken broth. I think those ones are pretty good and I've even seen them at walmart for like a dollar or 2 per packet.
Step 1: Bring cooking pot of water to a boil
Step 2: add contents of hot pot packet
Step 3: start dipping meat and vegetables in
Step 4: ????
Step 5: Profit

Usually just go with Swanson chicken broth plus this for dip:

Sometimes when I don't have the canned chicken broth at home. I just use Knorr chicken powder. Still good. I only care about the satay sauce.

Just get the Lee Kum Kee Instant Hot Pot Packs at Walmart. They are about $1 each. Not the best, but does the trick.

You dip that straight? Off topic but................
I'm always interested what other people use for dipping sauces. My current go to is:
Peanut butter (whipped a bit with hot water) + that satay sauce + soy sauce + sriracha blended into a yummy paste
and separately made in another bowl (for a small bowl):
a bunch of garlic chopped
a handful of roughly chopped cilantro
1/3 cup soy sauce
1/3 cup white vinegar
a few glugs of maple syrup (more if you need more balance)
a healthy shake of tabasco
a healthy dolup of sriracha
half a tsp of sesame oil
A bit of A) mixed with a bit of B) makes me want hot pot everyday. It's a bit of work, but so damn worth it.

For hot pot at home where it's just me and my wife that's usually what I go with to minimize prep and clean up. Simplicity is key. :)

Yes! That is the shit. At the end, the broth turns into a cesspool anyways. Satay flavor turns out the best.

You guys should try Jun Yuan on 41st and Victoria. Just opened. Their quality of ingredients is the best in town IMO but they lack a good spicy soup base.

for that specific bbq sauce I like to throw in minced garlic, chopped up green onions and a raw egg
I use a buncha diff sauces and shit gotta have variety lol

soup base: boil some chicken bones with water, add in century egg, onions and cilantro
dipping sauce: minced garlic, chopped chilli pepper, cilantro, soy sauce, sesame sauce mixed together over low heat with some water.

i make my own sichuan soup base: goal is to fry it and heat up all the dry ingredients to get the flavors out.
aznkev03: never thought about getting herbal from the chinese shops, that's epic. I'm doing that this thursday.
dipping sauce is pretty much the same.
u can add anything. I make my own xo sauce so i make sure i put that shit in there.

having said that, electric ones are much "weaker" for hotpot.
