Top Tip, Use a cooler, like camping cooler + bag of ice. Frees up space in your fridge and brines real good.
So fill up half water as the brine calls for, then half ice. Check it every 12 ish hours for ice, if it's gone, it'll start warming up past 0 degrees C.
