Blueberry Scones - Martha Stewart Recipes

i've used this one before, substituted the cream in for milk, cheese for blueberries instead, switched oven temp to 350 for about 8 minutes

Edith Adams: Favourite recipes

Can never go wrong with an Edith Adams recipe.....

Chive Cheese Scones

2 cups (500 mL) all-purpose flour

1 tablespoon (15 mL) baking powder

½ teaspoon (2.5 mL) salt

2 tablespoons (30 mL) sugar

¼ cup (75 mL) cold butter, cut into ¼-inch cubes

11/3 cups (330 mL) grated old cheddar cheese, divided

½ cup (125 mL) 2 per cent milk

½ cup (125 mL) buttermilk

1 large egg

¼ cup (75 mL) finely chopped fresh chives

In large bowl, sift together flour, baking powder, salt and sugar. Cut in butter until mixture resembles coarse crumbs. Stir in 1 cup (250 mL) cheese.

In small bowl, whisk together milk, buttermilk and egg; stir in chives. Add milk mixture to flour mixture and gently mix together to form a soft dough.

Using a ¼ cup (75 mL) scoop, drop batter on to greased baking sheet, 2 inches (5 cm) apart. Sprinkle tops with remaining 1/3 cup (80 mL) cheese. Bake at 400 F for 15 to 18 minutes. Makes 12 scones.
