Definitely get Shun, the VG-10 steel is much better than those German's, yet still very affordable. I sharpen knives as a hobby so I have tried many knives from all the people I know. :) |

Get a Wusthof and call it a day. I've honed it ONCE in a whole month of use in a busy restaurant setting. Cuts through Raw Primals and Fillets like butter. |
Theres a place on broadway that has EVERYTHING u need in a kitchen even proffesional setting. Global knives are cheaper there too. I believe its 79 99 for the medium french knife and 89 99 for the HUGE one. GET GLOBAL so sharp you ll get a boner |
