The appeal is due to its price.
True shark fin, not of the canned variety, can easily reach $35CAD/bowl, or $150HKD (probably even more at more upscale hotel weddings). Flavor wise, I really don't think there's anything mind-blowing about it. I've had it at nearly every Chinese wedding banquet I've been to and have never achieved the same euphoria as that brought by Pho.
