I have cases of the stuff. Sockeye only, of course. I bet none of you have had Canada number 1 grade canned salmon. They don't sell it here. Export only. Unless, of course, you have connections. Number one sockeye is incredible. The meat is so firm and the colour is bright red with lots of fish oil floating on top - omega3 goodness.

Only thing better than number one sockeye is home made canned salmon using freshly caught Fraser River sockeye. BTW, Fraser River Sockeye is unbeatable. Alaskan or Prince Rupert sockeye may be big, but nothing comes close to the taste of Fraser River sockeye. OK, Campbell River sockeye just as good, with sockeye caught near Tofino/Ucluelet close.

Which reminds me. The best way to keep salmon for a long time is to wash it and freeze it whole. Head on and not cut in any way shape or form. In bags - you can buy fish bags. The salmon can last for a few years in the freezer. The skin and head keep the flesh from freezer burn. A lot of people don't know this and dress the fish before freezing.

Not really. We live on the West Coast. Salmon is, or used to be, abundant. It also helps when you've been in the fishing industry for most of your life.

I'm also trying to give people ideas for preparing salmon. BBQ salmon is all a lot of people know how to make. There are tonnes of great recipes out there for Pacific Salmon.

I've been filleting mine and vacuum sealing them for freezing.

Today was the slowest day yet. I'm sure it's a combination of the river getting lower (dropped a foot since yesterday at the place I'm fishing) and the huge commercial openings. At this point I won't be going out on Saturday or Sunday due to the 36 hour commercial opening that is currently underway. Come the weekend there will be nothing left to catch and a shitload of weekend warriors to deal with. I'll start going back again Monday.

The place I'm going to is no secret it's in Chilliwack. Took us an hour longer than usual to get our fish today tomorrow will be interesting.

I just smoked up my Spring yesterday and we used Cedar chips and today were doing a couple sockeye with Apple tree chips. We get ours from Fred's Tackle shop here in the Wack.

We have a small 5 tray smoker nothing to big but it get's the job done. Were doing a couple different recipes as well. I think have about 15-20lbs of smoked from that 1 spring

Smoked spring. Nice. White or red spring? Cannot remember which one goes up the Fraser. Smoked Cohoe and then canned afterwards is supposed to be really good. Never tried it.

Apple tree chips, eh? Will try it out.

Both red and white go up but the one I caught was white that's why we smoked it. We got a couple reds that tasted amazing so far.

$3 a lb? ouch... i just bought one at costco for like $14 kg -_- i didnt think the price difference would be that great -_- bleh

they have return to inform the natives the end is near 2012!!!!!!

anyone actually bought sockeye salmon from natives, since they have lisence for catching them and its fresh

I was in Save On and saw whole fish going for 24$ and Fillets going for 21$

That means according to those prices, I have thousands of dollars worth of fish in my freezer

Not to mention all the smoked stuff I have that goes for even more money!

Anyone wanna buy fish? I sell cheap!! haha

Oh, that's really close. So they have Collinite and fish bags, cool. I only need a few I guess; not enough for a group buy I just don't want freezer-burn.
