In terms of straight up pho.
Dang Anh Cafe - Chinese donut with your pho. they used to be open till like 2-3am, but google says 12am now.
Pho Duy - only 2 items on the menu. chicken or beef. best viet coffee.
Pho Hong on Kingsway - best 24 hour pho spot, love the bun bo hue here.
honorable mentions:
Cafe Xu Hue or Song Huong for bun bo hue
Thai son or Got Pho Thien Kim for rice dishes
Hoang yen for Bun cha ca fish noodle soup.
Banh Mi Saigon for sandwiches.
Viet noodle guy for vermicelli bowls.
Pho Thai hang 2 express for sandwiches + really good selection of premade stuff. this is my go to place for sandwiches. sad the old location on Kingsway/Victoria was closed down. everything there was good.
Hoang yen / Phuong nam for bun rieu / crab noodle soup
My Chau for chicken pho ga / chicken congee / fried chicken + rice
new pho superbowl on kingsway where the old pho boi 24 hr place was.. havent tried this location, but the Coquitlam one was good.
been meaning to try Van 168 Coffee for their pho as well. heard good things.

I like banh mi Saigon their meatball and house specials are tasty
Tried their viet Bao they make as well, was ok basically spring roll filling inside a Bao, sounded better than it tasted.
Those little puff pastries with meatball inside though are addictive lol
