I was in a similar situation before, I went out with a girl who never wore them. Eventually she realized how much i liked them, then as a surprise she bought some and before i could see them on her we broke up :/

Why..?
You know a lot of girls are really self conscious about their butts thighs and stomachs. Thongs highlight the two former and it may very well be the case that your girlfriend isn't comfortable with these areas. If that's the case, you're better off with a comfortable girl in normal panties than an uncomfortable, stressed out and up tight girl in a thong.
Also they're often not comfortable. Would you wear one? Seriously? You offer to wear a thong and then see if she will change her position.
Personally I have several that I generally reserve for when pantylines are an issue but having a wedgie doesn't say 'sexy time' to me. :P

are there any stores that sell only thongs? or try to find a giftcard that says in the fine print.. only applicable on thong and thong related merchandise.. if she doesn't use.. tell her you're not ever getting anything from me ever again

That's The Ugly Truth. And it was a hilarious scene. But in the end it turned out that he did want to fuck it. Comfortable or not.
And one of the problems with discomfort is no one wants to fuck that either (well a select few do and hey if the OP falls into that category, go for it) particularly for girls that are extremely self conscious (and that is often the case with girls who don't have a lot of things that they wear just for the bed room). Like have you ever had sex with a girl who's more concerned about what you think about her thighs then getting off? Not sexy. Really. Or worse, one who really isn't into what is going on and is grudgingly humoring you? That's super not sexy.
So unless the thong is a deal breaker for the OP I would suggest he express his interest and then lay off it bring it up now and then but NO PRESSURE. If she does it of her own accord all will be much better for everyone involved.
