Look OP this is what you do if you really want your money back.
1. Go to the casino when she is working (go when she is a few hours into her shift).
2. Go to customer service said you are looking xxx for family emergency since you can't reach her by phone.
3. Customer service will page her at once
4. Make sure you have your phone video recording turn on the whole time
5. When she comes server her the doc and tell her straight up either pay or see you inc court and make sure you record everything
6. Walk out the casino as if nothing have happen

You don't need to worry about her feelings or your friendship with her because she doesn't care. By doing this you are showing her you mean business and you don't fucking care if she is embarrass in front of her co-workers. Also if her managers happen to be there and saw the whole thing, he is going to have some doubts promting her and since you show her you will go to her work place to get your money she will either pay up or risk losing her job.

I dont know for sure but I think the casino has legal right to escort you out for any reason they see fit. Don't get caught up in getting proof that you served her. The court gives u the benefit of the doubt that u did. After u serve her u write a completion notice to the court. It just helps u mentally to know it was on camera. She also knows it so her compliance to the court is reinforced
