My first time schucking was actually quite easy. I used an old blunt veg peeler. Was super fast and didn't get a scratch. Retained most of natural brine.

Something that looks like this.

Get someone of the larger Salt Spring oysters and put them on the bbq until they pop and just toss lemon and hot sauce on them is the best

Will you be grading them or just a random mix of sizes for $6/doz?

depends on what people want, i could grade them, usually will be x-small, small or i can just get a mix of between x-small, small and large, it would be easier for me to just get a mix,
i wont be doing a mix of graded and non-graded because then i would have to keep track of who wants what, so if i could get a count of who wants what, then it would be the best

corollagtSr5 07-25-2015 10:14 PM

I went to lobsterman and got the village bays and little wings. Little wings actually had a bit more bite to the taste than the more expensive village bays.

unfortunately i called and they dont have much as theres a shortage due to warmer waters. grgrrggghh need my oyster fix!!
