Proper cooking is only 1 simple rule.

Hello Revscene members,

I've been a professional cook for 10 years and i've been selling cars for the past 8 years.

But the one single most important rule to cooking great food is KEEP YOUR PAN HOT!!! don't let the pan temperature drop or don't put all your ingredients in the pan at once.

Reason to this is because once the pan heat drops, the food in the pan then will cook from the inside and the moisture will start to steam cook from the inside out. Thus, you are left with soggy onions, peppers, zuchini etc.....

Once your ingredients are prepped and all ready to go, throw each one in the pan from the longest cooking ingredient to shortest. While doing that make sure the temperature of the pan is always coming back to high temp to give it that sear on the outside.
