Or do most places only do one or the other.

Brown brothers Ford performance division. They have a secondary location that does performance modifications. The owner Tim Brown has quite a few Ford race cars of his own.

Try Mopac out in Langley. They do installs and they have a dyno. I see a lot of Mustangs, Chargers, Hellcats in their bays doing installs.
