Best Pancetta?
After trying Pancetta at Joël Robuchon I have not found anything even CLOSE to it!
I was wondering if anyone got any ideas where I can get really good Pancetta? I went to many stores including whole foods and have not found something good.

Cioffis meat market in burnaby. Maybe two rivers meats as well.

One of my best friend's girlfriend's brother is the head sommelier there. When they went they said their meal was a shade over 2k, all comped too. Lucky bastard.

4 people including wine and tip just under $1700.
It's expensive but oh my was it good.
