Charcoal VS. Propane

Cook on high heat and make a indentation in the middle so the patty is a concave shape before you cook it. That way it won't balloon.

AKA, don't buy pre-made patties or those dumb pattie maker contraptions.
Form a ball, then squish down by hand.
