CUSTARD
8eggs large
1 litre milk (or ½ milk + ½ heavy cream)
pinch salt
1 tsp sugar
Vanilla Bean 1/2 split lengthwise
CARAMEL
200g suger
115ml water (possible add more, make sure sugar doesn’t crystallize)
Garnish: Make a small design with the caramel and allow it to harden into a piece to place on top.
Mixed Green with Candied Walnuts, Pears, Apricot goat cheese, walnut vinaigrette
Braised shank with bunch of random herbs/red wine
Mushroom ravioli + 4 cheese sauce
