cooking vegetables in soup

it is said that cooking vegetables in soup causes the vegetables to loose some of its nutrients and enzymes. my question is... does the nutrients and enzymes bleed into the soup or does it just disappear from the heat?

some of the enzymes and nutrients get burnt away in the soup but not all of them.

Some of the nutrients will get dissolved into the broth, others simply get destroyed by the heat.
