I have a rental house; first tenant was an Asian couple. They stinked up the place so bad, no idea wtf they were cooking but the smell was so awful that I almost puked walking into my place. After they moved out, I had to get the carpet cleaned twice and the person who cleaned my carpets sprayed the entire place with something; don't know what it was but the smell was gone within a few days.
So I had an EI couple move in. I'm EI and growing up I know curry smell is the worst because it stinks up everything so when this couple moved out I had to get the carpet cleaned again, painted the walls and pinesol'd the entire place. Kept the windows open for a couple of days and the smell went away.
Finally had a white guy move in a few months ago, dude started smoking and when he left, the entire place smelled like a fucking club. So basically what I did was I ripped the carpet out and replaced it with vinyl hardwood flooring. Carpet is the worst if you have renters because it traps everything; vinyl flooring is the way to go. And smell gets trapped in the carpet or in the walls; my suggestion is get the carpet washed but I would prefer to just rip it out and paint the walls. Painting the walls will help big time.

Yes, new homes have small separate kitchens but when you're cooking curry its impossible isolate the smell unless you cook out in the garage or have a industrial sized fan, lol.

I know there is one EI family on the first floor in the apartment that I am in, and the whole hallway smells like curry from their cooking.
But there is also a chinese family on the second floor and that floor smells like salty fish.
Unfortunately for me, my neighbour is Korean and I can smell the kimchi and deep fried gyoza's when she cooks.

I've gone into an EI's home once trying to make my craigslist sales. It smelled like curry when I went in but I didn't think too much of it. Until I went home and realized that my clothes smelled like curry too, just from the 10 min of stay in their house.
might also be in the insulation in the walls too
best bet would be to just clean carpets, and if there's still smells then it's in the walls. if that's the case, your only hope is to mask the smell with something stronger
