Jamacian Jerk Wings

Does anyone know how to make the jamacian jerk sauce served on the wings at many pubs? Specifically Cat & Fiddle Pub in Port Coquitlam or Kelly O'Brians in Kelowna?

I've learned how to make it on my own however my receipe ends up being a bit more runny of a sauce then the pubs which is a bit thicker.

My Ingredients so far:
Vinager

black pepper

scallions

onions / garlic

jalepenos

red pepper flakes

salt and all spice

soy sauce and veg. oil

3 tablespoons dark rum
2 tablespoons water


1/2 cup malt vinegar
10 green onions, chopped
4 garlic cloves, peeled, chopped
2 tablespoons dried thyme
2 Scotch bonnet chiles or habanero chiles with seeds, chopped
2 tablespoons vegetable oil
4 teaspoons ground allspice
4 teaspoons ground ginger
4 teaspoons ground cinnamon
2 teaspoons ground nutmeg
2 teaspoons salt
2 teaspoons ground black pepper
2 teaspoons dark brown sugar
1 cup ketchup
3 tablespoons soy sauce


2 3- to 3 1/2-pound chickens, halved lengthwise, rinsed, patted dry
1/2 cup fresh lime juice

i just buy my jerk sauce in a bottle thats made from some store locally

NP, jerk sauce is so easy to make. I like to toss it on my chicken 24-48hrs before I put it on the bbq. If you want it a bit spicer just add more chillis

its .. e.d smith's Caribbean Jerk Sauce
they only distribute it to restaurants in canada( need business license) you get it thru sysco i think . but they apparently sell it in stores in the states

if anyone can get it in in for group buy

Murd0c just finished making the sauce its delicious but its not the e.d. smiths but still delicious this ones more authentic tasting
