Only watched till the end of quickfire. Chefs looks good, but the show lacked energy throughout.

Mark McEwan's stoneface puts me to sleep. No comparison to Tom Colicchio.

Gastrique is a steeped liquid used to infuse flavour into a hollaindaise. Its usually shallots and herbs. He was probably making a refrence to the ratio used in the hollaindaise (Usually its 1T of gastrique and 1T of Egg yolk) and if off, can result in weak flavour or a heavy texture.

gastrique thou thats a vinegar and sugar combinattion.......

theres no sugar in a reduction for hollandaise.....

So are we talking about like sauteed shallots, then using the oil from that? Or taking the shallots and steeping it in some water?

I've always just used butter, water, yolks and lemon juice, salt and cayenne.

Looks like torrents will be a bit harder to come by. I use TorrentLeech, RevTT, TorrentBytes, and SuperTorrents all of which are private torrent sites and it was only available on RevTT through a request.

no need to look for torrent, if you're able to stream on the foodnetwork site as stated earlier. became a fan of this show after the past season with all-stars.

thats just a basic hollandaise.
i think they're talking about adding a reduction to the hollandaise, such as when you make a bearnaise.
so like white wine, white wine vinegar, shallots, tarragon, and i forgot what else. reduced to like a spoonful of liquid and added to the hollandaise

That series definitely got better as it went on. I was rooting for him and Francois from the beginning, was a bit worried for him on the last few challenges though... talk about a nailbiter?
