I've never had pho. I've heard from various sources that I'm really not missing out that much.

Anyway, the lemongrass chicken and other stuff sounds good.

Pho > Ramen all day long

Not that I eat soup other than pho all the time but can’t think of a soup I’d prefer. Also there’s quite a bit of variation in Pho with north VS south, bun Bo hue etc.

Yeah I can go months without having ramen.

Pho or bun bo hue I probably have to have at least once a month if not every few weeks.

There's only been two that I can remember in the last 20 years.

Pho Century, which became the Pearl Castle. The owner always wore a beret and had a sick beard. I'm pretty sure it's the same Pho Century that's further down on Kingsway now closer to Edmonds.

Ha Cafe, which moved across Metrotown.

Pho is good in Vancouver, has been for decades. Not sure about the ramen, as AFAIK nobody was serving quality ramen last time I was there (no dedicated ramen shops existed in the 00's to my knowledge).

What is the popular type there?

Ramen has always been good in Vancouver though. More than a few foodie publications / food bloggers have coined Vancouver as the ramen capital of North America.

Mind you, since COVID, labour, costs (and esp rent) has been extremely destructive for our restaurant industry, and people's spending habits have changed as well. So I am really not sure how much longer that description will be valid for.

Ramen in north america only started becoming popular in mid 2000s with Dave Chang's Momofuku Noodle Bar in New York.

So it's no surprise you didn't see anything in Vancouver in the early 2000s, since it didn't really catch on at all until mid 2000s.

It's your typical tonkotsu, shio, shoyu. Tsukemen was big in the foodie realm around early/mid 2010s but even then only a handful of local places did tsukemen, and did it well.

That's what I figured, thanks. The ramen in HK is just fine despite being incredibly popular (especially pre covid).. The Japanese chains are generally the best places to go IMO, but they're not as good as the domestic versions. I always try to get my fill of ramen whenever I go there, and just stick to cantonese noodles when I want noodles here, generally only in the winter.

Pho is much the same in my experience, at least compared to what I liked in Vancouver.

I recognize and appreciate the complexity and craftsmanship of a good ramen that justifies the relative higher cost of ramen (I don't know how ramen restaurants can survive today with the food costs tbh), but in terms of pure craving and satisfaction, I find a relatively cheaper bowl of pho is just so much more fulfilling.

For me Ramen is like a once in awhile treat coz it's so rich, especially tonkotsu or tsukemen.

I’ve said it before but I find it hard to believe there are many other places with the top tier diversity Vancouver offers for food, especially Asian food (disclaimer never been to Asia) but for what these places offer fuck there are some amazing meals to be had

In Europe was actively seeking out ANY Asian cuisine even just mall Chinese and it was laughably bad. Ate at the top rated viet place in Lyon, Pho Hoa would be a 10/10 comparatively, and ate the “best sushi in Portigal” that had a black guy and an Indian guy behind the counter and it made Fujiya look like Bluewater lol

i think pho is highly underrated for the amount of work that goes into the broth. A good pho stock takes a very long time to simmer and all the herbs need to be grilled beforehand to release the aromatics.

The fact that they require it to be a clear broth is also that much more work than a tonkatsu broth.

Just like most Asian cuisine, the Japanese are the best at selling their food as "art" whereas most people think Chinese food is just cheap food. Its actually very very labor intensive, a lot more than Japanese food to be honest.

Man, montreal was fucking crazy. Vancouvers food scene Per Capita is embarrassing in comparison. I thought we were something important as well, but it sucks here considering the reputation it has. We have great asian food (specifically Chinese) in comparison, but African, Mediterranean, Mexican, South American, etc is all lacking so hard here.

Even when I went to Atlantic Canada and Maritimes earlier this year, having a salad with a chicken breast that wasn't fried was like

Not even missing Asian food I just wanted some food with herbs and spices other than deep fried batter and salt.

Tbh ppl say cost of living is cheaper in Nova Scotia.... I cannot live long term without the availability of food diversity.
