Went to Pho Tam after class today - got the usual #1 large and it ended up pretty good; must better than last time when the beef was way overcooked.

Once my gf has free time and she wants to eat it, I will do it.

I will be making PHO GA (chicken Pho); however, you if you want BEEF all you have to do is substitute the beef with the pho. However, the beef broth takes about 3 hours to to stand and boil. Whereas the chicken pho is 10 mins. Beef broth also tastes better the following day; however, chicken you can eat right away.

Seriously man, if you even remotely think that place is good, you need to re-access your pho dining lifestyle.

nahh pho hoa is not the worst place but it is one of them. golden train and the place on broadway and cambie are probably worse. Have you tried the salad roll at the broadway & cambie? 1 bite and i spit it out and threw it away, it was disgusting and this dude beside our table ate 2 of them like they were good. I couldn't believe anyone can even eat that sh!t. My gf wanted them and she ate half of one and couldn't even stand it. The place is dirty too.

Pho Tau Bay in Surrey, I think its 148 st and 108 ave? I'm not too sure about the address but it's in the same complex as Subway, Macs, The donair place [which I can't remember the name of] Anyways that place is pretty good, and they open til midnight on weekends.

Pho Tam by Surrey Central was pretty good too but I haven't been there in awhile so I'm not sure if the quality has gone down or not.

Thai Son [373 E. Broadway] is great for other Vietnamese food like bun bo hue, the crepes, caramelized fish or pork and that sour soup. I'm not sure about their pho though.

If anybody's interested, I got this pho recipe from a member on another forum:

The trick to making good pho broth is this: low and slow. After you first parboil the bones to remove impurities, you want to cook it on low heat and for several hours.

Here's the recipe:

Broth:
5-6 lbs of beef shank bones, with marrow
2 lbs of beef shank meet (trimmed off silver skin and fat)
2 onions, charred on the outside, then scrape away the burnt bits. (You can cook this directly over flames for 4-5 minutes.)
1 4-5" finger of ginger, charred the same way as the onions
6 full star anise pieces
8 whole cloves
3-4" cinnamon stick
1 1.5" thumb-size piece of yellow rock sugar
1 tablespoon salt
1 teaspoon white pepper
4-5 tablespoon fish sauce (adjust to your liking)

To cook the broth, first bring a pot of water to a boil. Put in the bones, then boil for 4-5 to let the impurities float to the surface. Dump out the pot. Make sure the bones are well rinsed so there're no loose bits.

Cover the bones with about 6-7 quarts of cold water. Add in onion, ginger, cinnamon stick, salt, fish sauce, and the shank meat. Wrap the star anise and cloves in a piece of cheesecloth, or put them in a teaball, so you can remove them later. This spice pack should be removed after about 2 hours, but you can leave it in longer if you want a more aromatic broth.

Bring the broth to a boil, then turn down to low heat. Remove the shank meat (not the bones) in about 60-70 minutes. Wrap up so it doesn't dry out, set aside.

Let the broth cook on low (or even simmer, depending on how much heat you have). The key is to not invigorate the broth too much. Skim off the scum and fat that float to the top, but do leave a bit of fat behind (it's delicious fat, man). Let it cook for 5-6 hours, but at a minimum 4 hours is needed. I find that after 6 hours, you get significantly diminished return when you cook it longer. So, longer cooking is really not necessary. That said, if you leave the broth overnight, it'll deepen in flavor.

That's it for the broth, it's pretty easy once you get the hang of it. Just let it cook on low, and you can go about your business, e.g. go to a local pub for a little bit.

As for the content of the bowl, I use sirloin meat (in the freezer for a few minutes, sliced thinly), beef meatballs (with tendons), beef tripe (optional), pho noodles (soak for about 30-45 minutes before cooking), thorny cilantro, cilantro, thai basil, mint, beansprout, lime, and onion (optional). (You don't need all of the herbs, but at a minimum get thai basil, beansprout, cilantro, and lime.)

Oh, if you like the tendon bits, once the both is done, take a small knife and trim off the tendon bits off the bones. (This is where I usually get my fill of tendons before other people get to them. )

------------------------------

If you've never seen pho made before, there's an extra chapter for you. After you've cooked everything, removed the bones, sliced the meats, etc.--crank up the heat and get a rolling boil going.

In a separate, smaller pot, fill with water and bring up to a boil. Take 1 serving of the soaked pho noodles, put in a strainer, then dunk in the boiling water for 3-4 minutes, until the pho is al dente. Take out, strain, put on the bottom of a large bowl.

Next, layer a few slices of the cooked shank meat, a few meatballs (cut in half), some tripe or tendon pieces (optional), then a few slices of the raw, thinly sliced, sirloin. Spoon the boiling broth over this, season with pepper if necessary. Serve.

At the table, have all the veggies (rinsed and dried), lime wedges, etc. arranged on a big plate. Have a container or a bottle of hoisin sauce, and sriracha, on the table as well. Let your guests help themselves to the veggies and condiments.

dude... there are pho places in the UK. i duno which city you're in though.

when I was in london for a few months there was no way I could go without pho.

I tried like.. 5 different places? they all were a rip off and sucked ass.

EXCEPT ONE PLACE. lol it's kinda far out, i forgot the area, and the name of the restaurant, but it was good. I'll ask my friend, she may remember but, i doubt it. anyways it was the only good pho restaurant in all of london, i swear.

and don't trust any review of any asian restaurant in england, i swear, the people there don't know what they're talking about when it comes to food.

if No 9 opened in chinatown there, they'd be the best Chinese restaurant... in all of the UK probably, i swear.

Just got back from my new favorite pho place in Surrey...

Pho Hot
9544 120th Street(Scott Road), Surrey B.C.

Pretty good, better than the other places in Surrey (Vinh,Tau Bay,Tam), in my opinion. Lots of noodles. I like how thin they slice their beef.

The place looked really clean and the space was pretty open, not cramped at all.

Give them a shot, I don't want them to close (we were the only people there for a good hour), cause the food is good and it's close to where I live :D

I think my tongue has just grown accustomed to the Pho Quyen on Fraser and 23rd? and Pho Tan on Main and 30th; simply because I live near those places..
Pho Tan, #38 on the menu is a MUST try. Got hooked after my first bowl.

for vancouver

this has my vote!

For all the Surrey-ians or if you are just in the area,
Pho Tam on 135st is the best.
Free parking, spring roll+salad roll and Large Pho for just $9
Yummy, I could go for some pho right now....:jiggy:

Bao Chau, because its in my area; plus they got killer spring rolls.

There are other locations around Metro Vancouver that I frequent.

The only place that I refuse to go is any Pho Hoa; all their franchise restaurants are horrible.

Can't remember the name of the pho but it is menu item #18 at Pho Hoa.
It's just basically pho and chicken meat. Is someone able to recommend another place other than Pho Hoa that has this type of pho? I've ate some chicken pho but it was just lemongrass chicken placed into the pho. Prefer the clean cooked/boiled style. Thanks

Question for you Vietnamese folks:

I noticed that Kim Phung and places like Pho Quyen serves a darker soup as opposed to most places which use a clear broth. Does the soup/broth indicate a regional style of Vietnamese cooking or is it simply how they cook?

Took the advice at tried out Kim Phuong and was not disappointed at all. Their broth was amazing, so tasty but not in a msg way, their noodles were al dente and not mush, their meats were thinly sliced but well proportioned.

Only downside was that the place was a bit messy, had lettuce in the front door and floors, don't know if it's a ritual or something(saw 2 piles of salt in front of Kimura Im guessing for new years).

It's more on Victoria and 42nd if you're looking, will go back for sure, darn near drank their broth lol

Most if not all vietnamese restaurants serve bun bo hue with the giant vermicelli noodles. My restaurant serves it in the medium sized noodles while the small sized noodles are what you find in salad rolls or grill meat dishes w/ vermicelli. It tastes a lot better with the medium sized noodles than the giant noodles, I don't know why restaurants always serve the giant ones.

Ive been to your restaurant at least 5 times, since its in my neighborhood but not only for that reason, the food there is delicious! Good pricing for quality pho.

head down to my restaurant, Cafe Hoi An on 34th and Victoria, opened in March.

I got Mi Quang and Mi Cao Lau, very impressed.
The Mi Cao Lau was awesome. Loved the garlic sauce on top, love the thinly sliced pork. I'm coming back for sure.

Some questions about the stuff in the Rau Thom.
I think there was romaine lettuce, thai basil and mint in there, but there were 2 herbs I couldn't identify.
The first one was a smooth leaf, smooth edges, slender and comes to a point. It was peppery in taste and was actually a little spicy.
The second one was small, it looked similar to the mint leaves, but with a smoother surface, but pointier edges.
Would be awesome if you could fill me in on what those were.

I love it when you can see the owners just chill out and sit down for a meal. The older guy was fiddling with the batteries of some remote controls, and the lady had on an apron. Somehow, seeing this always gives me a little more confidence in the honesty and authenticity of a place.

Cheers and Best of luck!

The Mi Quang noodles from vietnam, you're going to have to get a relative to send it to you through the mail! yea you can't find it here I don't think. I personally think regular rice noodles is better for Mi Quang.

Gosh I only know the veggie names in vietnamese. I'll pay closer attention to the names of the veggies when my dad goes buys it. see if its labeled on the packages.
And my dad was fixing the controller for the ceiling fans cause they weren't working.
My whole family works there lol even my girlfriend (wife).

Haha nice, definitely tastes a lot different than every other bun bo hue soup you've tried at every other restaurant right?? I think bun bo hue at every restaurant tastes exactly the same. Or rather some restaurants just use Pho soup and put some different flavor in it.

Went to your place today. I was the dude with the Canucks sweater that was signed.

Had the cao lao and my friend had the mi quang.

First

the place is really clean

second

This place has the most intresting clientelle. Saw a nammer auntie with some awesome fake guns.

third. The noodles were awesome. it came together well. The reason I love this dish so much, is because the greens with the limited soup base, make this an awesome hot day dish especially when you eat the bits of mint that's in it. The only thing that I would have changed personally is the crispy rice cracker. It needs to be deep fried wonton chips. But i'm so glad you have it. The closest i've had finding it has been the cambodian place just a block over who do a really good dry noodle too. PLus after I ate it I felt fantastic and nostalgic of vietnam. Can't explain it but some foods just make me really really happy and it put a great smile on my face, and I've been happy for the rest of the day.

My friend said the mi quang was "different" for him, which usually means it was good.

I'm definetly going to be a return customer. Next week i'm going to try the bun bo hue. Plus your sister was cute :D

Recently opened pho restaurant by copa cafe at coquitlam.. Cant rly recall the name, it was something along the lines of pho thien... the restaurant smelled like bleach and washroom, but the service and food definetly compensated it well... Unlike other pho restaurants, this place puts alot more meat per bowl...it was a rly filling meal.. Craving for some more... I usually dont leave a pho restaurant full, even with the largest size available.. So you can imagine how big of an eater I am.. I left the place without any room left in my stomach to make excuses for more orders....the large sizw filled me up well..

Pho in Paris is very different than what you get here in North America. I had pho in Paris once (I don't remember the location) but everything from the broth, the noodles, and beef were very different. My apologies as this isn't the answer you were looking for. :p

Just go out and try pho wherever you see a Vietnamese restaurant in Paris. They're scattered throughout the city and the people there are extremely friendly. :)

Got it. Was looking for recc's (cheap/big/delicious) for good pho, Euro/Parisienne influence, whatever that may be.

My friends and I ate here the first day we arrived in Paris. The restaurant was just down the block from where our hostel was and we were starving. I don't have any other Vietnamese places to compare it to in Paris but we enjoyed the food. Pho is more expensive and the portions aren't what you're used to in Vancouver. From what I remember you'd get a small size for the price of a large (one of my friends ended up ordering a second because he was so hungry) but the food hit the spot and still reminded us of home. A husband and wife run the restaurant and they were really friendly (taking our orders themselves, serving our tea -- I don't even remember seeing a waitress working). They also had frogs legs which tasted pretty good considering it was my first time. It seemed like most people who came into the restaurant were regulars they'd be chatting it up with the owners.

The address is 29 Rue Véron
75018 Paris, France
It's about a 5 minute walk from the Moulin Rouge.. when I google-mapped it the name of the restaurant was different (Escale-Montmartre?) but I assume my picture is more recent because I was only there last July.

Damn I miss Europe :(

Went to Hoi An yesterday with my gf. Our experience was ruined however by a guy sitting in a table next to us who decided it was a good idea to rub his feet with his hands while we ate. haha that sounds so vietnamese, it's funny cause it's so normal if they are wearing slippers.
Yea it was meant to really be a small cafe shop so we don't really have a real kitchen or ventilation but it's been so popular since day one that it's become like a real busy restaurant. what did you order?

The Vietnamese center is called Dong Xuan Center: Herzbergstraße 128

There are a couple of restaurants there but my favorite is the one accross from the supermarket in Halle 2(Building 2). If you get lost, just follow the asians.
