My first assumption is insurance.
Also, pro cyclists don't wear these watches while they are racing. They likely wear it when they step up on the podium after a stage win, or during press events.
Imagine whitev70r rocking a RM while casually riding around on a $30K bike at an RS meet. (Very realistic scenario)

Revscene rarely comes through for me, but hoping that trend will change. I’m looking for Cadbury Fingers in a gift tin. It used to be everywhere, but nowadays, it’s next to impossible to find. If anyone has seen them, let me know.

You can still get them if you are willing to import from UK or check out some specific UK import stores locally like the Brit Store or Black Pudding Import. But you won't find them in regular shops.
Source: one of my partner in crime here who grew up in the UK and loves UK food as trash as it is.
