IMO now the basic is aisle access. | A 1-2-1 lay-out is preferred for business, IMO. Exactly, I hate having to climb over someone to go to washroom or something. Even if it is my travel partner, I don't want to disturb them while they're sleeping.

Anyone with experience on Etihad? Potentially booking a J class flight with them to Abu Dhabi and Bangalore soon. Would prefer not to because I want my Aeroplan, but will book with Etihad if need be.

Etihad is quite nice. Service in the air is good, the service on the ground less so. Think Emirates but not as good. I like the less blingy interior better though.
The J cabin on the 787 is nice and new, the 777 is fairly standard 1-2-1 alternating, try to get a proper window seat if by yourself.

EDIT: I booked an Aeroplan fixed mileage ticket for 12500 miles + $75 in taxes/surcharge vs. $400 ticket(after 20% off). I know I don't get the most out of my miles because it's only economy, but I'm okay with that.
Also got answers for my checked baggage questions.

On top of that Air Canada have change Taiwan to Taiwan, China on their website. The only reason they did it coz the Chinese Gov have sent letters out to major airlines asking them to change since they claim Taiwan is part of China.
Most airlines just say f off and the white house made statement about it. Simply no airline is seriously about it. Air Canada for some dumb reason decided to change Taiwan to Taiwan , China anyways. I mean what's China going to do? Ban all Air Canada flights from entering China? I mean what is China going to do if you don't listen? Nothing.
I am not from Taiwan but with this change I will not be taking Air Canada again. What's next? Telling airlines to only server Chinese food? Or don't to fly to certain countries China don't like? From what I read tons of Taiwanese are piss off about it and a lot of the Taiwan business community are already voicing their options.

I'm planning to travel to Asia in just a little over 2 months away from now.
Is there a right or wrong time to book flights? I've been checking every week for the past while and price's been quite consistent. Some argue book early, some argue book later.

Book as early as you can , when you have your dates confirmed and you're comfortable with the price. Kayak and Google have pretty good tools to help you make an educated guess on when airfare is at its low and high points.

One suggestion is to look at other airports. For example, you want to fly YVR-PEK on AC/CA, the direct flight out of YVR might be more expensive than say SEA-YVR-PEK because AC/CA want to compete with other carriers flying that route direct.
So it's not unheard of that you can pay 800 for SEA-YVR-PEK while booking just YVR-PEK (same flight and everything) is 1200.
Many frequent flyers would actually use their miles for "positioning flights". Say YVR-PEK is a lot more than LAX-PEK. So, one'd book the LAX-PEK flight while use miles to fly down to LAX for that flight.
I've done it in the past to go down to LAX/SFO or even DFW once for some cheap business class flights. It's cumbersome to do it with luggage and all, but it beats flying economy in sardine cans for 13hrs.

Anyone been on west jets 787? Going to be using it for a flight from YYC to Dublin, haven’t had great experiences in the past with WJ so my hopes aren’t too high for long haul

WestJet service longhaul with the 787 should be a completely new animal vs its old service on their 767's. New seats, new cabin, new meals and service levels I'd presume.

Have my summer trip booked. Going to be taking AC/OZ/CA in J. I will post some pics when I'm done with the trip. The OZ is on A380!
